Potato and onion tortilla

This Spanish-inspired potato and onion tortilla is easy to make and even easier to eat. Serve with a simple salad for a quick and tasty meal.

Ingredients:

  1. ¼ cup olive oil
  2. 1 brown onion, thinly sliced
  3. 4 garlic cloves, crushed
  4. 600g potatoes, peeled and thinly sliced
  5. 8 eggs
  6. Salt and pepper, to season

Method:

  1. Heat 1 tablespoon oil in a large frying pan over medium-high heat. Add onion and garlic. Cook for 8 minutes or until onions are softened. Transfer to bowl.
  2. Heat remaining oil in pan and add potatoes. Cook, stirring, for 25 minutes or until golden and tender. Add in onion mixture.
  3. Preheat grill on high. Whisk eggs in bowl. Season with salt and pepper.
  4. Pour whisked eggs into pan with potatoes. Shake to evenly distribute ingredients, ensuring eggs combine with potato. Cook over medium-high heat for 5 minutes or until bottom of tortilla is set.
  5. Place tortilla under grill and cook for 5 to 10 minutes or until golden and cooked through. Cut into wedges and serve.
