Reader recipe: Banana cake

Over60 community member, Wendy Mills, 70, from Tarlee in South Australia shares her super-simple and scrumptious banana cake.

Preparation time: 10 minutes
Cooking time: One hour

Ingredients:

  • 125 grams margarine    
  • 1/2 tablebspoon bicarbonate soda
  • 3/4 cup sugar    
  • 1 tablebspoon vanilla essence
  • 2 eggs          
  • 1 tablebspoon milk
  • 2 to 5 mashed bananas 
  • 1.5 cups self raising flour
  • 1 cup sultanas (optional but recommended)

Method:

1. Cream together margarine and sugar, add eggs, bananas and sultanas.

2. Mix together bicarbonate soda, vanilla essence and milk and heat in a saucepan.

3. Add flour and heated mix to banana mixture.

4. Pour mixture evenly into two loaf tins and bake at 180 degrees for 45 minutes to one hour.

Tip: This cake is nice with finished with a lemon icing.
