Bubble and squeak croquettes

Bubble and squeak croquettes

Turn leftover vegies into these delectable crispy and golden croquettes of goodness. The family will love them!

Ingredients:

  • ¾ cup plain flour
  • 1 cup fine dried breadcrumbs
  • Extra light olive oil, to shallow fry
  • 25g butter
  • 200g bacon, trimmed, chopped
  • 1 egg
  • ⅓ cup milk
  • 6 cups finely chopped mixed vegetables (choose your favourites – cabbage, corn, peas and shallots work well)
  • Handful of fresh herbs, such as continental parsley or mint
  • 3 cups mashed starchy vegetables, such as potato, sweet potato and pumpkin
  • Lemon wedges, to serve
