Cauliflower mash

Cauliflower mash

A great alternative to mashed potatoes, this cauliflower mash is very delicious with fewer carbs.

Ingredients:

  • 1 cauliflower, cut into small florets
  • 1 tablespoon of butter
  • 3 tablespoon milk
  • 2 tablespoons sour cream
  • ⅓ cup finely-grated parmesan cheese

Method:

1. Bring a large saucepan of salted water to boil. Add cauliflower and cook for 15 minutes or until tender.

2. Drain cauliflower well and place back into pot. Add milk, butter, sour cream and season with salt and pepper.

3. Mash with masher until smooth. Stir in parmesan.
