  • 2 cups of Queensland blue pumpkin, puréed (or any pumpkins that is one the sweeter side)
  • 1 ½ cups of heavy cream
  • ½ cup of brown sugar
  • ⅓ cup of sugar
  • ½ teaspoon of salt
  • 2 eggs, plus 1 yolk
  • 2 teaspoons of cinnamon
  • 1 teaspoon of ground ginger
  • ¼ teaspoon of ground cloves
  • ¼ teaspoon of nutmeg
  • ¼ teaspoon of ground cardamom
  • ½ teaspoon of lemon zest
  • Pie crust

Method:

  1. Preheat oven to 220°C.
  2. In a large bowl, beat eggs and mix in sugars, spices, salt, and lemon zest.
  3. Stir in cream and pumpkin purée.
  4. Pour mixture into pie shell.
