Fruit salad pudding

Fruit salad is always a dessert-time winner, particularly in the summer months. Here’s a recipe for a delicious, healthy fruit salad, with a pudding twist. Perfect after a barbeque!

Ingredients:

  • 100g instant vanilla pudding mix
  • 800g peach slices, undrained
  • 500g sliced pineapple, undrained
  • 450g strawberries
  • 300g blueberries
  • 300g raspberries
  • 150g cherries
  • 2 oranges
  • 2 kiwi fruit
  • Bunch of grapes (red or green)
  • 1-2 tablespoons sugar (optional)

Method:

  1. Combine peaches, pineapple and the dry vanilla pudding mix in a large bowl, including the juice that comes from the cans.
  2. Mix well until the pudding is dissolved.
  3. Chop up oranges and kiwi fruit and prepare additional ingredients.
  4. Stir in strawberries, blueberries, oranges, raspberries, cherries and grapes.
  5. Chill until the mixture sets, then serve.
