Lime mug cake

Zesty and sweet, you won’t believe how easy it is to make this lime mug cake.

Serves: 1

Ingredients:

  • 4 tablespoons flour
  • ½ teaspoon baking powder
  • 2 teaspoons sugar
  • 3 tablespoons milk
  • ½ tablespoon vegetable oil
  • ½ teaspoon fresh lime zest
  • 1 tablespoon lime curd

Method:

  1. Combine all ingredients except the lime zest in a big microwave-safe mug. Mix with a mini whisk or fork until the batter is smooth.
  2. Stir in lime zest.
  3. Cook in a microwave for about one minute, or until spongy. Let cake cool and enjoy within a few hours of cooking.
