Exploring The Lost Recipes by Ross Dobson

<p><em>In his quest to unearth Australia’s forgotten culinary treasures, Ross Dobson has dredged up everything from the delicate to the downright curious – recipes that had slipped into obscurity like an old record player and are now ready for a comeback.</em></p> <p>During the Covid pandemic I embalmed myself in nostalgia. There was loss on a global scale and, for many of us, it was also a time of great personal loss. Within a few short years, just prior to and during the pandemic, I lost both my parents. I found peace and comfort (and joy in spades) in reading old Australian recipes. </p> <p>I devoured recipes in old books, newspapers, magazines – anything I could get my hands on. Simple and even not-so-simple recipes. Shared or sought. I became interested in (nay, obsessed with) the forgotten: recipes that have been overlooked or disregarded, or were barely noticed in the first place. These are the lost recipes. </p> <p>We found a culinary oasis that was the beginning of the end of our ‘meat-and-two veg’ diet: a rival more exotic and delicious. </p> <p>The original idea for this book was to limit it to baking recipes: cakes, slices, biscuits and puddings. Surely we have all heard of, eaten or made a lamington, custard kiss, finger bun, passionfruit sponge or pav. These have all received top billing in any production of Australian classics. But what about a whimsy, fluffy dick, Napoleon cake, Australian shortbread or cream lily? These delicious things have been waiting in the wings for far too long. I am nudging them into the limelight. </p> <p>But as I perused an article in a magazine or newspaper, it was not uncommon to see a cake or slice recipe incongruously sandwiched between recipes for braised breast of lamb and devilled whitebait, or turmeric duck and farmhouse casserole (rabbit with inside-out stuffing). How could I possibly resist including these? And so, the scope of the book fell into place. </p> <p>I was drawn to the recipes that were popular at one point in time. A good recipe would be printed in newspapers again and again. Today, we would say it has ‘gone viral’. But, like a whispered game of ‘pass it on’, some good recipes would lose something or become something else over time. </p> <p>In researching for a previous book, <em>Australia: The Cookbook</em>, I noticed a recurring lack of nuance. There seemed to be little room for movement or deviation from a recipe. A lamington recipe was just that. There are, to this day, slight variations. Some recipes might call for a filling of jam, cream, buttercream or even panna cotta, a contemporary take. And if this was the case, it wasn’t a regional thing. It was shared and enjoyed on a national level. Much like a recipe for pavlova, meat pie or a hamburger with the lot. </p> <p>Nigella Lawson says of Australian food: ‘These [recipes] demonstrate that peculiar mixture of macho and camp that is a feature of a certain kind of Australian cooking tradition.’ </p> <p>I agree. I feel like much of our food tradition is binary: the meat and the sweet. The brown of a beef stew and the garish pink of coconut ice. Of course, this is reducing Australian recipes to a simple notion. </p> <p>There are exceptions to the rule, not as rare as one might think. It is these exceptions that I went in search of. In doing so, I inadvertently discovered that some Australians did cook with ingredients such as garlic, ginger, coconut milk and chilli. A simple roast lamb with garlic (page 110) and a chicken curry (page 96) laden with ginger and green chilli are testament to that. Capers, anchovies and lentils are also used in recipes that went under the radar. </p> <p>Looking at our past offers insight into who we are now. Through this culinary looking glass we can also see the opposite of what we might expect or what we might think is the norm. What we choose to cook and consume can be a revelation of our identity, of who we are. </p> <p>Our Indigenous culture is the oldest in the world, yet many of us are unfamiliar with native ingredients; Europeans brought cuisines and cultures to these shores, yet we are not European; Asia is our nearest neighbour and the origin of some of our favourite dishes, but we are not Asian. </p> <p>We are unique. MasterChef judges tear up during emotional tribute to Jock Zonfrillo

So I miss him a lot.”</p> <p>The 46-year-old died in Melbourne in the early hours of April 30th last year on the eve of the launch of the 15th season of <span id="U84596901796pyG"><em>MasterChef</em>.</span></p> <p>Following his untimely death, Andy Allen shared that he wanted to take part of the latest season of the show in memory of his late friend and colleague.</p> <p>“It’s nearly a year. Sometimes it feels like yesterday and other times it feels like it was a long, long time ago,” Allen told the <em>Carrie and Tommy Show</em>.</p> <p>“It was hard. It was really hard. I didn’t actually know if I was going to do it (<em><span id="U845969017963c">MasterChef</span></em>) again."</p> <p>“It just felt so wrong to do it without him, because we just loved it so much together and walking back into that kitchen was huge.</p> <p>Allen said while parts of filming the show were difficult, he knew he was honouring his friend by continuing on in the judging role. </p> <p>“It was … there was just this weight of grief over me,” he said. “I just didn’t know if I’d be able to get through it. I just didn’t know if I’d be able to do it justice, to give the show what it needed because there was so much grief attached to that kitchen."</p> <p><em>Image credits: Channel Ten </em></p>

Jock Zonfrillo's widow pays tribute to her late husband

I have no idea where that time went."</p> <p>"I really did have plans to get more of his projects out but somewhere between trying to find my feet as a solo parent - and just going through long periods of time where I found it really hard to look at videos and photos of Jock - the plan didn't go to plan."</p> <p>She continued, "So now I just want to focus on the work."</p> <p>"I've got hundreds and hundreds of hours of Jock cooking his favourite recipes explaining what vinegar or oil he used in different things, things he discovered on our travels, fun behind-the-scenes stuff, interviews, and it's a part of my life I want to start sharing with everyone again."</p> <p>"The purpose of putting it up is for us to enjoy it, to enjoy Jock, so I hope you do."</p> <p>Jock Zonfrillo was found dead in a hotel in Carlton, near Melbourne's CBD, on April 30th 2023 while Lauren and their two children were in Italy, and his death is still being investigated. </p> <p><em>Image credits: Instagram </em></p>

Jock Zonfrillo honoured one year after passing

<p>Jock Zonfrillo has been remembered by his wife, Lauren Fried, and friend, Jimmy Barnes, a year after the MasterChef judge's tragic death. </p> <p>Fried organised a moving piper memorial for her late husband, which friends and family attended. </p> <p>His wife took to Instagram to share a montage of images from their life together with the caption: "One year. We watched the sunrise today in true Scottish style - wind, pouring rain, and Jock's beloved bagpipes as our soundtrack."</p> <p>"A day for us to try to accept that he's not coming home, that this is forever, that we were lucky he was ours," she added. </p> <p>"Forever their Papa and Dad. New detail in Jock Zonfrillo's death revealed

<p>Almost a year on since Jock Zonfrillo’s death, a spokesperson for the Coroner’s Court of Victoria has revealed that they are still investigating what happened. </p> <p>In a statement shared to 7NEWS on Monday, the spokesperson confirmed that Zonfrillo’s death was still under investigation. </p> <p>“The death of Jock Zonfrillo remains under investigation by the coroner,” they said</p> <p>“As this is an active investigation, no further comment can be made.”</p> <p>The MasterChef judge, 46 was found dead in a Melbourne hotel room on April 30, 2023. </p> <p>At the time of his death, his wife Lauren was in Italy and had called Victoria Police requesting a welfare check because she was unable to reach him on the phone. </p> <p>A cause of death was never publicly stated, although sources close to the family have claimed that he died of natural causes. </p> <p>Zonfrillo was only one day away from joining his co-stars in launching the 15th season of MasterChef before his tragic passing. </p> <p>The first episode of the season was pushed back a week as friends, family and colleagues mourned the star's passing. </p> <p>The show aired all of the episodes with Zonfrillo in it, with the blessing of his widow, and they honoured his memory in the <a href="https://www.oversixty.com.au/entertainment/tv/far-out-i-did-it-masterchef-winner-crowned" target="_blank" rel="noopener">final episode</a>. </p> <p><em>Image: Getty</em></p>

Fed up farmer blasts major supermarkets for price gouging

Jamie Oliver tipped to replace Jock Zonfrillo on MasterChef

“Far out… I did it”: MasterChef winner crowned!

<p dir="ltr">Brent Draper has been announced as <em>MasterChef Australia’s</em> winner!</p> <p dir="ltr">Brent was a returning contestant who had previously withdrawn from the 2021 season of <em>MasterChef</em>, after revealing that he was <a href="https://www.oversixty.com.au/lifestyle/food-wine/it-ain-t-weak-to-speak-masterchef-s-brent-draper-opens-up-about-his-anxiety" target="_blank" rel="noopener">struggling with his mental health</a>.</p> <p dir="ltr">For the first round the pair had to make “a dish that tells a story,” a challenge that was set by judge Melissa Leong.</p> <p dir="ltr">Both contestants presented a dish with a pork base, with Brent opting for a pork chop with tamarind ketchup glaze, roast cabbage and salsa, which the judges deemed “perfectly executed”.</p> <p dir="ltr">He scored a near perfect 29 out of 30.</p> <p dir="ltr">Rhiannon went next whipping up a crispy pork belly dish with citrus caramel, fennel and orange salad and crispy shallots.</p> <p dir="ltr">Although judge Andy Allen called it “the best-looking plate” she’d presented all season, she also received some criticism mainly that she was a bit stingy with the sauce.</p> <p dir="ltr">She scored 25 out of 30.</p> <p dir="ltr">The second and final round was more intense as the pair had to recreate a pocket watch dessert made up of layers of coffee, cream and cake.</p> <p dir="ltr">Both contestants struggled with making the clear “glass” sugar dome that sits on top of the cake. While Rhiannon nailed it after two attempts, Brent couldn’t quite do the same after running out of time, so he had to present a final dish he thought he’d “stuffed up.”</p> <p dir="ltr">Although his dish was less than perfect, Brent did a “very good job” at recreating the textures and flavours of the cake, which impressed pastry chef Amaury Guichon.</p> <p dir="ltr">Rhiannon’s dish failed to impress the judges with Amaury saying that the “textures are all over the place,” which Mel Leong agreed was an issue as it meant “we lose the joy of the dish.”</p> <p dir="ltr">In the end Brent scored 34 points in round two and Rhiannon scored 27.</p> <p dir="ltr">Brent redeemed himself after withdrawing from season 13 of the show, with a final score of 63.</p> <p dir="ltr">Rhiannon did her best and had a final score of 52 points.</p> <p dir="ltr">The finale of this year’s <em>MasterChef </em>ended with an extended tribute to Jock Zonfrillo, which showed a highlight reel from his time as a judge and the message: “Give it up for Jock Zonfrillo.”</p> <p dir="ltr">The season 15 <em>MasterChef </em>winner took to his Instagram to share his joy and tribute to Zonfrillo.</p> <p dir="ltr">“Far out… I did it,” he captioned the post.</p> <p dir="ltr">“This is a big win but it isn’t just for me. “Papa activities”: Jock Zonfrillo’s widow shares bittersweet post

<p dir="ltr">The widow of late <em>MasterChef </em>star Jock Zonfrillo has shared a bittersweet post on how she is trying to fill his shoes.</p> <p dir="ltr">Following Zonfrillo’s <a href="https://www.oversixty.com.au/news/news/shattered-hearts-culinary-world-mourns-tragic-death-of-jock-zonfrillo" target="_blank" rel="noopener">passing in Apri</a>l, his wife Lauren Fried has been keeping his Instagram account active to share memories of him, his last projects, and provide updates on how her family is coping.</p> <p dir="ltr">In the most recent post, Fried shared that their young son Alfie had asked her to do some things he had traditionally enjoyed doing with his dad.</p> <p dir="ltr">“Alfie has asked me to do some of his Papa activities with him - making crepes and doing hours of Lego were in his requests,” she wrote in the caption.</p> <p dir="ltr">“I went with the easiest option of a trip to the barber, which the boys used to do together, followed by gelato,” she added.</p> <p dir="ltr">“It put a smile on his face which was beautiful.”</p> <p dir="ltr">She shared a series of photos of Alfie getting his haircut and smiling proudly as he showed off the final look. World famous chefs in the running to replace Jock Zonfrillo

<p>Channel Ten is on the hunt for a new judge to join the <em>MasterChef Australia</em> team, two months after the shocking death of Jock Zonfrillo. </p> <p>Several world-famous chefs are set to be in the running to join Melissa Leong and Andy Allen, with many prospects appearing on the show as guests before. </p> <p>"International names such as Jamie Oliver, Nigella Lawson and Shannon Bennett have all been thrown around," an insider told <em>Woman's Day</em>.</p> <p>Despite the hopes for these chefs to join the cast, the insider said their intense schedules has made booking them for the competitive cooking show "a pipe dream".</p> <p>The network is also reported to be considering bringing back "heritage" names to the show, such as original judges George Calombaris and Gary Mehigan, to attract older viewers.</p> <p>Despite the discussions of Zonfrillo's replacement, rumours have also circulated that Leong and Allen may continue on as co-hosts of the show without a third colleague. </p> <p>The <em>Herald Sun</em> reported that the cooking duo may instead go into the next season alongside a rotating roster of guest judges.  </p> <p>Meanwhile, others have suggested Melissa, 41, and Andy, 35, may be planning to quit <em>MasterChef</em> as they continue to grapple with the tragic death of their co-star.</p> <p>Some fans are convinced the entire hosting panel may be replaced altogether, after Channel Ten refused to confirm Jock's replacement in the recent casting call.</p> <p>The popular cooking show was thrown into disarray after Jock Zonfrillo's devastating death on April 30th, the day the newest season of <em>MasterChef</em> was due to air, with the premiere of the show being delayed a week after his passing. </p> <p><em>Image credits: Instagram</em></p>

Jock Zonfrillo’s widow shares touching throwback snaps

<p dir="ltr">Lauren Fried has shared a few touching throwback snaps of how sweet and loving her late husband Jock Zonfrillo was.</p> <p dir="ltr">The snaps were posted on Zonfrillo’s Instagram account, which Fried has taken over after she asked his fans on whether it would be appropriate for her to release his <a href="https://www.oversixty.com.au/health/caring/jock-zonfrillo-s-widow-breaks-silence-over-his-passing" target="_blank" rel="noopener">unfinished projects </a>on social media.</p> <p dir="ltr">In a few snaps, Zonfrillo and his six-year-old son Alfie, were pictured spending quality time at a museum.</p> <p dir="ltr">In one photo, the chef could be seen lying on the floor and pointing at the ceiling as his son looked on. Jock Zonfrillo’s secret celeb interviews

<p dir="ltr">Jock Zonfrillo had reportedly been filming his own video series where he secretly interviewed dozens of celebrity chefs in his trailer before his <a href="https://www.oversixty.com.au/news/news/shattered-hearts-culinary-world-mourns-tragic-death-of-jock-zonfrillo" target="_blank" rel="noopener">tragic death</a>.</p> <p dir="ltr">The <em>MasterChef Australia</em> judge would reportedly invite the high-profile chefs into his trailer after filming the hit show for a private interview which he recorded using two smartphones, according to the <em>DailyMail</em>.</p> <p dir="ltr">Luke Nguyen, who was one of the celebrity chefs that was interviewed by Jock, said that the things they discussed ranged from personal topics, such as family life, plans for the future, and passions outside the kitchen.</p> <p dir="ltr">“They weren't anything to do with MasterChef... they were just for him, from what I could gather,” he told the <a href="https://www.dailymail.co.uk/tvshowbiz/article-12163359/Jock-Zonfrillos-secret-interview-tapes-chefs-MasterChef-set-death.html" target="_blank" rel="noopener"><em>DailyMail</em></a>.</p> <p dir="ltr">“We would go into his little green-room trailer on set and we'd do a little chat which was all recorded with his own phone and would go for maybe 10 to 15 minutes.</p> <p dir="ltr">There were all kinds of questions recorded for what I guess was his own personal archives,” he said.</p> <p dir="ltr">Jock had reportedly been stockpiling content over the three years he was working on the show.</p> <p dir="ltr">The news comes days after his widow, Lauren Fried, <a href="https://www.oversixty.com.au/health/caring/jock-zonfrillo-s-widow-breaks-silence-over-his-passing" target="_blank" rel="noopener">broke her silence</a> about his passing and revealed that he’d “worked hard” on various projects before his untimely death.</p> <p dir="ltr">"He had behind the scenes photos and interviews from MasterChef, books, a fashion range, he's got spirits ageing in a distillery in Tassie," Lauren said in a video posted on Instagram.</p> <p><em>Image: Getty</em></p>

<p dir="ltr">Jock Zonfrillo’s widow, Lauren Fried has opened up about her grief for the first time, one month after the <a href="https://www.oversixty.com.au/news/news/shattered-hearts-culinary-world-mourns-tragic-death-of-jock-zonfrillo" target="_blank" rel="noopener noreferrer"><em>MasterChef</em> judge’s death</a>.</p> <p dir="ltr">Lauren shared an emotional message to Jock’s <a href="https://www.instagram.com/p/CtEACthuyJi/?hl=en" target="_blank" rel="noopener">Instagram</a> on Sunday night, where she spoke about her grief and thanked fans for their “overwhelming” outpouring of support.</p> <p dir="ltr">"It's been a month since we lost Jock, and I put a line in the sand thinking that at the one month mark, I would turn some sort of a corner," she said.</p> <p dir="ltr">"Obviously that hasn't happened."</p> <p dir="ltr">The video, which was shared to over 395,000 of Jock’s followers, has been viewed by over 300,000 people, and Lauren took the time to thank fans in her message.</p> <p dir="ltr">“There’s no time that I could allocate to say thank you to everyone. <p>Celebrity chef Jock Zonfrillo’s eldest daughter, Ava, has shared a loving tribute to her late father, three weeks on from his passing. </p> <p>In a post to social media, Ava shared a series of images of herself and her father - some from her childhood, some more recent, all of them capturing happy moments from throughout their lives. </p> <p>“Still can’t accept that we’ll be remembering you for more time than we had you,” she wrote as the post’s caption, “but it doesn’t mean we’ll love you any less.</p> <p>“I love you dad, always.”</p> <p>Support came in thick and fast for the young Zonfrillo - who is one of two daughters from a previous relationship - with friends and supporters offering their love and support in Ava’s time of grief. </p> <p>“Sending you so much love and strength,” wrote reality TV star Tayla Broad. </p> <p>“Sending you so much love, beautiful girl,” influencer Rebecca Harding echoed. </p> <p>“Love you dearly and will be giving you the biggest of hugs soon my darling friend,” one friend promised. “We’ve got you”.</p> <p>“Thinking of you always,” another wrote, “giving you the biggest hug”.</p> <p>“What an amazing human,” one said, before adding, “Ava, I can’t imagine the pain! Dinnigan had previously shared her own tribute to the late chef and his family, writing that “our hearts go out to the family that Jock adored and loved so much.</p> <p>“It feels like I have had him as a lifelong friend but that is how he made everyone feel. Rest in Peace Jock.”</p> <p>The response was similar there, with one user summing it up for everyone when they wrote “it's obvious his loss has been felt deeply across Australia. A man who must have given so much to others.”</p> <p>The loss is one sitting heavily on the shoulders and in the hearts of Jock’s loved ones - from his children, to his wife Lauren, and his coworkers-turned-friends, who all meant the world to him. </p> <p>As Andy Allen, Jock’s fellow <em>Masterchef Australia</em> judge, told Channel 10, “every single day he made time for Lauren and the kids.</p> <p>“Every single day [on set] we’d be in makeup, he’d get a call, he’d FaceTime them.”</p> <p>Andy went on to make the heartbreaking confession that one of the hardest things to come to terms with was knowing his late friend would never be able to walk his three daughters down the aisle, something he knew “meant so much to Jock.”</p> <p><em>Images: Instagram</em></p>

Ten slams “misleading” Masterchef rumours

<p>Channel 10 have put an end to rumours surrounding the next season of<em> Masterchef Australia</em>, in the wake of false reports circling that they were on the hunt for a new judge. </p> <p>In the wake of chef Jock Zonfrillo’s passing, rumours have circulated that the network was looking for a replacement. And according to a report from the <em>Daily Mail</em>, they even had a few frontrunners in mind. </p> <p>The publication claimed that no well-known chef was off the cards, and that while it was a “sombre” affair, an insider had informed them that conversations had begun, despite their ongoing grieving process.</p> <p>Their insider reportedly stated that the final decision would come down to on-screen chemistry, not existing popularity, as “that really earned Jock the position originally”.</p> <p>They suggested that Zonfrillo had been “a dark horse”, but that his chemistry with fellow judges Melissa Leong and Andy Allen had been what won everyone over, and that “the new host will need that more than anything”. </p> <p>The<em> Daily Mail</em> went on to list their reported shortlist of contenders for the position, from the likes of former<em> Masterchef </em>stars Dan Churchill and Hayden Quinn, author Danielle Alvarez, Hugh Allen, Josh Niland, Joel Bickford, Alessandro Pavoni, and Jordan Toft. </p> <p>Their most notable, however, was Poh Ling Yeow, who had made a return to the series a few nights prior.</p> <p>However, as Channel 10 have informed <em>news.com.au</em>, none of this is true. </p> <p>“Casting for the next season of <em>Masterchef Australia </em>has not commenced,” a spokesperson for the network declared. “To suggest otherwise is completely false and misleading.”</p> <p>Zonfrillo, as well as Leong and Allen, had only joined the cast of <em>Masterchef </em>in 2019. Their line-up marked a significant change for the series, with former longtime judges Matt Preston, George Calombaris, and Gary Mehigan exiting the hit cooking competition after nearly a decade at the helm.</p> <p>And although they hadn’t possessed the same public profile as the former batch, Zonfrillo and his fellow judges had proven a major success with viewers, with the show powering on in the ratings realm. </p> <p>The 2023 season - Zonfrillo’s last - had welcomed strong viewership for the network as well, and while many may continue to speculate about the following season, Channel 10 remain firm that pre-production will not get underway until much later in 2023. </p> <p><em>Images: Masterchef Australia / Ten </em></p>
