Miguel’s mushroom sweet potato gnocchi

<p>When it comes to cooking, celebrity chef Miguel Maestre has a surprising favourite ingredient – mushrooms.</p> <p>“Mushrooms are a brilliant and versatile ingredient that make meal times tastier and healthier,” the restaurateur and TV presenter said.</p> <p>Here’s one of Miguel’s mushroom recipes.</p> <p><strong>Recipe by: </strong>Miguel Maestre for Australian Mushrooms</p> <p><em>Serves 2-3</em></p> <p><strong>Ingredients:</strong></p> <ul> <li>2 medium sweet potatoes</li> <li>2 cups all purpose flour</li> <li>2 teaspoons salt flakes</li> <li>flour for dusting</li> <li>250g Swiss brown and button mushrooms, chopped in quarters</li> <li>10 sage leaves</li> <li>2 tbsp toasted pinenuts (optional)</li> <li>1/2 lemon</li> <li>50g butter</li> <li>Grated Parmesan</li> </ul> <p> <strong>Method:</strong></p> <ol> <li>Preheat the oven to 200 degrees Celsius. Poke a few holes in the sweet potatoes with a fork, and then bake them for at least 1 hour on a bed of rock salt in the oven until they are tender and the skin starts to look wrinkly.</li> <li>While the potato is still warm, peel the skin away from the flesh and set aside to cool slightly.</li> <li>If you have a potato ricer, put the sweet potatoes through this. Otherwise you can use a fine sieve and push the potato through with a ladle or wooden spoon.</li> <li>Place the flour on a board, or your kitchen bench. Make a well in the centre and add the riced / sieved sweet potatoes to the well.  Season with salt and pepper.</li> <li>Using your hands, work the sweet potato into the flour until it’s fully combined. You don’t want the dough to be sticky so keep adding flour gradually until you get a nice dry dough. This could take quite a bit of extra flour.</li> <li>Once fully combined, roll the dough into a ball and cut it into 4 even pieces. Roll each piece into a long sausage, each about a finger in thickness.</li> <li>Cut the rolls of dough into 2cm little pillows of gnocchi, and gently toss each piece into some flour on your work bench to ensure that it’s dry. At this point you could also use a gnocchi board or fork to press grooves into each piece of gnocchi to make it more professional looking but this is optional and tastes just as good without!</li> <li>To cook the gnocchi, bring a large pot of water to the boil and add the salt. Blanch the sweet potato gnocchi in salted boiling water until they all float. Then drain, reserving a little of the cooking water.</li> <li>In a large frying pan, over a high heat, add a splash of olive oil and a teaspoon of butter, add the quartered mushrooms and cook for a few minutes until golden. Spoon out the mushrooms into a bowl.</li> <li>Using the same frying pan, add the cooked gnocchi and sear until crispy. Add the remaining butter, pine nuts, sage leaves and mushrooms you just set aside. Cook until the butter starts to burn.</li> <li>Then add lemon juice and Parmesan and serve.</li> </ol> <p><strong>Tip: </strong></p> <ul> <li>Putting the potatoes through a sieve or potato ricer is a vital step to making gnocchi, as this breaks down the starch.</li> <li>If you make gnocchi often, a potato ricer is a fairly inexpensive kitchen tool that is handy to have.</li> </ul>

Didn't make the cut: Channel 10 axes 7-year-running TV show

<p>Get out the tissues for <em>The Living Room</em> will not be making it to 2020 like the rest of us. </p> <p>Despite being a popular show for viewers on Friday evenings, Channel 10 has decided to axe the program and have confirmed the 7:30 pm show will not be returning to our screens after 7 years on air. </p> <p>While this news may come as a shock to viewers, the presenters, Amanda Keller, Barry Du Bois, Miguel Maestre and Dr Chris Brown will keep appearing in an unconfirmed show in the same time slot.</p> <blockquote style="background: #FFF; New TV personality announced as first cast member on I’m A Celebrity Australia

“We’re a family”: Barry Du Bois pays tribute to his The Living Room co-stars

<p>It was an emotional moment for The Living Room crew when they won the Logie for Most Popular Lifestyle Program.</p> <p>Last October, co-presenter Barry Du Bois revealed on the show that his cancer had returned. What followed was several gruelling months of chemotherapy as Barry fought hard to beat the disease and return to his beloved TV family. He did it, and the win for The Living Room was just the cherry on top.</p> <p>Backstage at the Logies, Barry got emotional as he described co-star Amanda Keller as "everything" to him.</p> <p>"She means an incredible amount to me," Barry told <em><strong><span style="text-decoration: underline;"><a href="https://www.nowtolove.com.au/celebrity/tv/amanda-keller-barry-du-bois-friendship-the-living-room-49763">TV Week</a></span></strong></em>. "We are a family. She's been my soulmate from the second we met."<br /><br /></p> <p><img width="435" height="435" src="https://oversixtydev.blob.core.windows.net/media/7819718/1531185053295_tvweektlr_435x435.jpg" alt="1531185053295_TVWEEKTLR" style="display: block; margin-left: auto; margin-right: auto;"/></p> <p>Barry said he's had "amazing support" from his three co-presenters.</p> <p>"It's brought us even closer together," he said.</p> <p>Amanda believes Barry's story has "touched so many people".</p> <p>"There's a lot of love for this show," she said. "And much of that is to do with him.</p> <p>"When Barry shared that his cancer had returned and what treatment lay ahead, I don't think I've ever seen television as real as that.</p> <p>"That touched a lot of people's hearts, because he wanted to help and inspire other people. His work is amazing."</p> <p>Dr Chris Brown said Barry's health battle had shaped their year on The Living Room.</p> <p>"It's all we think about, to be honest," Chris said. "The show comes second to Barry and his health."</p> <p>Miguel Maestre explained that the four co-hosts try to be together as much as they can.</p> <p>"There's a lot of fake things out there in this world – not just in TV, but in life," he pointed out. "But we are great friends."</p> <p>Barry said a lot of families across Australia had been "struck by disease".</p> <p>"We hope it makes them feel a bit better to realise that, even though we're up on that stage getting these things [awards], we have ups and downs too."</p> <p>But on the night of the Logies, Barry said he was feeling "fantastic".</p> <p>"Whenever I'm with these guys, I feel great," he smiled. "I have the best support in the world."</p> <p> </p>

(@baz_dubois)</a> on Apr 11, 2018 at 1:27pm PDT</p> </div> </blockquote> <p>Du Bois also revealed to fans the book would contain 34 recipes which were created specifically for him by his colleague Miguel, “before, during and after my treatment in consultation with experts at @chris_obrien_lifehouse.”</p> <p>In 2010 Du Bois was diagnosed with plasmacytoma, a cancer of the immune system, but despite undergoing successful treatment revealed the cancer had returned as multiple myeloma, a cancer of the plasma cells, last October.</p> <p>Du Bois gave an update on his condition when he returned to the Living Room last month.</p> <p>“I'm not going to kid anybody, whilst I was in hospital, the treatment I went through was hard work,' he announced.</p> <p>“But I'm back at home. I'm with my beautiful family, the children and (wife) Leonie -and I'm back with you guys!
