Butterflied lemon chicken
<p>Once you try Merv Hughes’ recipe for butterflied lemon chicken, you’ll never go back.</p>
<p><strong><span style="text-decoration: underline;">Serves:</span></strong> 4</p>
<p><strong><span style="text-decoration: underline;">Ingredients:</span></strong></p>
<ul>
<li>1.2 to 1.5 kg whole chicken, cut through the backbone</li>
<li>2 tablespoons Worcestershire sauce</li>
<li>Salt</li>
<li>½ teaspoon cracked black pepper</li>
<li>1 garlic clove, crushed</li>
<li>Juice and zest of 1 lemon</li>
<li>Olive oil, for cooking</li>
</ul>
<p><strong><span style="text-decoration: underline;">Method:</span></strong></p>
<ol start="1">
<li>Put the chicken on a chopping board, breast side down, and using a pair of kitchen scissors, cut closely through each side of the backbone.</li>
<li>Turn the chicken breast side up and open the chicken. Place your hand on top and flatten. Rub the chicken with the Worcestershire sauce, salt, pepper, garlic, lemon and olive oil.</li>
<li>Place the chicken on the barbecue grill, breast side down, and cook over a medium-high heat for 15 to 20 minutes, depending on size. Turn and cook for a further 15 to 20 minutes.</li>
