Teriyaki silver trevally fillets with sesame & zucchini

<p><strong>Serves 4</strong></p> <p>There are good commercial teriyaki sauces and marinades available, or you can make your own by combining equal quantities of light soy sauce and mirin.</p> <p>The name comes from the Japanese words “teri” meaning shine and “yaki” meaning grill, as meat and fish are brushed with the marinade while being grilled to give a shiny coating.</p> <p>This recipe is a super easy way to marinate fish in less than 20 minutes but still packed full of flavour!</p> <p><strong>Ingredients </strong></p> <ul> <li>¼ cup teriyaki sauce</li> <li>2cm piece ginger, finely grated</li> <li>1 large clove garlic, crushed</li> <li>1½ teaspoons white sugar</li> <li>1½ teaspoons sesame oil</li> <li>2 teaspoons sesame seeds, toasted (see notes)</li> <li>4 x 180g silver trevally fillets, skin off, bones removed</li> <li>3 zucchini</li> <li>1 tablespoon vegetable oil</li> <li>3 green onions, thinly sliced diagonally</li> <li>Steamed rice, to serve</li> </ul> <p><strong>Directions</strong></p> <p>1. Combine the teriyaki sauce, ginger, garlic, sugar, sesame oil and sesame seeds in a bowl. Add the fish, cover and marinate for 10-20 minutes.</p> <p>2. Trim the ends off the zucchini and quarter lengthways. Heat a non-stick frying pan over a high heat and add the oil. Add the zucchini and cook for about 2 minutes, until they begin to colour. Remove to a warm plate.</p> <p>3. Remove fillets from marinade, reserving marinade.</p> <p>4. Return the pan to the heat, add the trevally fillets and cook for 1-2 minutes, until the edges have turned opaque. Turn the fillets, add the zucchini and the reserved marinade and cook for a further 1-2 minutes, adding a few teaspoons of water if the marinade begins to caramelise.</p> <p>5. Arrange the zucchini on plates, top with fillets and garnish with green onion. Eye fillet with mushroom sauce and roasted winter veg

<p>This warm and delicious will be a hearty meal the whole family will enjoy.</p> <p><strong><span style="text-decoration: underline;">Ingredients: </span></strong></p> <p><em>For the roasted winter vegetables </em></p> <ul> <li>1 carrot, peeled, cut in half lengthways and sliced 1cm on an angle</li> <li>1 parsnip, peeled, cut in half lengthways and sliced 1cm on angle</li> <li>400g orange kumara, scrubbed and diced 1.5cm</li> <li>½ red onion, sliced 0.5cm</li> <li>2 teaspoons runny honey or maple syrup</li> <li>1–2 handfuls baby kale leaves (or use baby spinach)</li> </ul> <p><em>For the eye fillet with mushroom sauce </em></p> <ul> <li>300g beef eye fillet steaks (at room temperature)</li> <li>3 tablespoons white wine or Marsala</li> <li>½ red onion, finely diced</li> <li>125g white button mushrooms, thinly sliced</li> <li>1 teaspoon soy sauce</li> <li>½ cup sour cream</li> </ul> <p><strong><span style="text-decoration: underline;">Method: </span></strong></p> <p>1. Preheat oven to 220C. Line an oven tray with baking paper. Toss all vegetables (except baby kale) with honey/maple syrup and a drizzle of olive oil on prepared tray. Season with salt and pepper. Roast for 20–25 minutes, or until vegetables are starting to caramelise. Toss halfway to ensure even cooking.</p> <p>2. When vegetables have 10 minutes' cook time remaining, heat a drizzle of oil in a large fry-pan on medium-high heat. Cook eye fillet for 3 minutes each side. In the final 3 minutes of vegetable cook time, move the vegetables to one side and add beef to tray. Continue to cook for a further 3 minutes.</p> <p>3. Remove tray from oven and cover beef until ready to serve. Sprinkle kale over vegetables and toss to wilt.</p> <p>4. Return same pan to medium heat (do not clean). Add wine/Marsala to pan, let it bubble and use a wooden spoon to rub bottom of pan to release any pan brownings. Cook until liquid has almost evaporated.</p> <p>5. Add a drizzle of olive oil to pan along with onion and mushrooms and cook for about 5 minutes, stirring occasionally (add a tablespoon of water to pan if onion starts to burn). Add soy sauce and sour cream, immediately remove from heat and stir to combine.</p> <p>To serve: Slice beef thinly against the grain. Divide roasted winter vegetables between plates and top with sliced beef. Spoon over mushroom sauce.</p> <p><em>Written by Nadia Lim. Pepper-crusted beef fillet with horseradish potatoes and beetroot

<p>This spicy crusted beef is an utter delight, with roasted baby beetroots and creamy potatoes. Look for new potatoes such as pink eye or Nicola.</p> <p><strong><span style="text-decoration: underline;">Serves</span><span style="text-decoration: underline;">:</span> </strong>4 – 6</p> <p><strong><span style="text-decoration: underline;">Ingredients:</span></strong></p> <ul> <li>2 teaspoons black peppercorns</li> <li>2 garlic cloves</li> <li>1 teaspoon salt</li> <li>3 tablespoons finely grated horseradish</li> <li>2–3 tablespoons olive oil</li> <li>1 × 600 g eye fillet steak</li> <li>8 baby beetroot, trimmed</li> <li>Salt and freshly ground</li> <li>Black pepper</li> <li>1 kg new potatoes</li> <li>250 g crème fraiche or</li> <li>Sour cream</li> <li>2 tablespoons chopped flat-leaf (Italian) parsley</li> </ul> <p><strong><span style="text-decoration: underline;">Method:</span></strong></p> <ol> <li>Preheat the oven to 180°C.</li> <li>Toast the peppercorns in a dry frying pan over medium heat for 1–2 minutes. Crush using a mortar and pestle. Add the garlic cloves and the 1 teaspoon of salt to the bowl of the mortar and pound until smooth. Mix in 2 teaspoons of the horseradish and enough olive oil to form a smooth paste.</li> <li>Heat 2 tablespoons of the olive oil in a heavy based frying pan over medium–high heat. Sear the beef for 2–3 minutes on all sides, until golden brown. Rub the pepper paste over the seared beef and place on a baking tray. Scatter the beetroot around the beef, and season with salt and freshly ground black pepper. Roast for 25 minutes, or until the beef is cooked to your liking (medium rare is ideal). Remove the beef from the oven, cover with foil and rest in a warm place for 8–10 minutes. Check to see if the beetroot is cooked. If not, return to the oven and continue cooking.</li> <li>Meanwhile, put the potatoes in a saucepan, cover with cold water and bring to the boil. Reduce to a simmer and cook for 20–25 minutes, until tender. Drain, put in a large bowl and remove the skins if desired. While the potatoes are still hot, mash roughly, keeping the potatoes quite chunky. In a separate bowl, mix the crème fraiche or sour cream with the parsley and the remaining horseradish, and season well with salt and freshly ground black pepper. Mix through the mashed potato.
