This dairy-free coffee ice cream contains just four ingredients
A four-ingredient dairy-free coffee ice cream has gone viral for its simplicity and utter deliciousness.
The very simple recipe contains just four ingredients and doesn’t need an ice cream maker. The dairy-free treat also calls for fresh bananas instead of cream for the base.
The recipe was shared by Becca Ludlum from My Crazy Good Life earlier this year.
Dairy-free coffee ice cream recipe
Serves: two (two scoops each)
Ingredients:
- 3-4 sliced frozen bananas
- 1/4 cup of very strong espresso coffee (at room temp)
- Honey/sugar
- 1/2 tsp vanilla extract (I prefer coffee extract if you can find it)
Method:
1. Brew coffee. I made my coffee and sweetened with just a bit of sugar to my liking, as I was worried the ice cream would turn out a bit bitter. Let it cool.
2. In a food processor, add the frozen bananas, coffee, and vanilla extract. Blend until smooth and creamy.
3. Freeze for an hour.
