Almond, carrot and orange cake
Take your carrot cake to the next level by adding the delicious taste of orange and almond. The good news? This recipe couldn’t be any easier.
Ingredients:
- Butter, to grease
- 1 orange, peeled, chopped, deseeded
- 150g of butter
- ¾ cup of sugar
- 2 eggs
- 1 ½ cups of plain flour
- 2 carrots, peeled, grated
- 110g of almond meal
- 3 teaspoons of baking powder
- Powdered sugar
Method:
- After preheating your oven to 180°C, grease a 22cm cake pan with butter and line the base.
- Using a food processer, process orange until fine.
- Add butter, eggs and sugar, and combine.
- Add carrot, almond meal, and flour and combine.
- Pour mix into pan.
- Bake for 70 minutes or until cooked through.
- Let cool and top with powdered sugar. Serve.
