Banana cream pie
Creamy and sweet, this banana cream pie will go down a treat come dessert time.
Ingredients:
- 1 22cm pie crust
- 3 cups of whole milk
- ¾ cup of sugar
- 1/3 cup of flour
- ¼ teaspoon of salt
- 3 egg yolks
- 2 tablespons of butter
- 1 teaspoon of vanilla extract
- 3 bananas
Method:
1. Prepare pie crust in pie dish.
2. In a saucepan, scald milk.
3. In a second saucepan, add sugar, flour and salt, gradually adding the milk. Stir over medium heat until mixture thickens. Cover and let cook for approximately two minutes more, stirring occasionally.
4. In a bowl, beat egg yolks.
5. Add a bit of the heated mixture to the yolks, stirring thoroughly. Add egg mix to saucepan.
6. Cook mixture for one minute, stirring consistently.
7. After removing saucepan from heat, add butter and vanilla and mix in.
8. Let cool until slightly warm.
9. Slice bananas and place evenly in pie shell.
10. Poor mixture over bananas.
11. Top with meringue or whipped cream.
