Banana fritters
Stuck for ideas for those overripe bananas languishing in the fruit bowl? These banana fritters will do just the trick. Be warned: once you know how easy they are to make, you won’t stop.
Ingredients:
- 6 bananas
- 1 cup plain flower, plus additional for dusting
- 2 teaspoons baking powder
- 1 ¼ cup cold water
- Vegetable oil for deep frying
- Icing sugar to serve
Method:
1. Sift one cup of flour and baking powder into bowl. Whisk in water until batter is smooth and lump-free. Leave to stand for at least 10 minutes.
2. Halve bananas and dust in plain flour.
3. Pour oil into large fry pan until five-mm deep. Heat over medium heat until hot. Dip one piece of banana at a time into batter, allowing excess batter to drain, and cook in fry pan for one to two minutes each side or until golden and cooked through. Remove to a wire rack or paper towel lined plate. Continue with remaining banana pieces.
4. Dust with icing sugar. Cut into bite sized pieces.
Top tip: Serve with maple syrup and vanilla ice cream.
