Beetroot and orange salad

An unlikely combination of beetroot and orange produces this fresh, tasty salad that’s bursting with flavour. Enjoy!

Serves: 4

Ingredients:

Method:

1. Preheat oven to 180°C. Place beetroots in baking tray. Drizzle over two tablespoon of olive oil and finely grated orange rind. Cover with foil and bake for 45 minutes or until beetroots are tender. Remove beetroots from tray, reserving pan juices.

2. Cut beetroots into wedges and place in bowl with oranges and rocket. Add pan juices and toss to mix ingredients together.

3. Divide portion into four plates and sprinkle over sesame seeds. Serve immediately.
