Cream of broccoli soup
Simple, delicious and quick to make, this broccoli soup will be slurped up in no time.
Serves: 4
Ingredients:
- 2 tablespoon butter
- ½ cup cream
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 potatoes, peeled and chopped
- 4 cups chicken stock (or vegetable stock)
- 4 cups chopped broccoli florets and stems
- Salt and pepper
Method:
1. In a large pot, melt butter over medium high heat. Sauté garlic and onions until tender. Add potatoes and coat in butter. Add stock and bring to boil and then simmer.
2. Stir in broccoli and return to simmer. When broccoli is tender, use a blender or food processor to blend in batches. Return soup to pot and add cream. Season with salt and pepper to taste. Serve.
