Broccoli, parmesan and zucchini quiche
Packed with nutrients and protein, this filling vegetable quiche is both healthy and delicious.
Ingredients:
- 300g sweet potato, peeled and cubed
- 300g of broccoli, florets removed, stem cut into pieces
- Cooking spray
- 8 eggs
- 2 cloves of crushed garlic
- 60g of roasted red capsicum, cut into strips
- Half a large zucchini, sliced
- ¼ cup of milk
- ⅓ cup of grated parmesan
- Salt and pepper to taste
Method:
1. In salted boiling water, cook sweet potato and broccoli until cooked through half-way.
2. Preheat grill to medium high heat and coat an oven-proof frying pan with cooking spray.
3. In a large bowl, combine eggs, garlic, capsicum, zucchini, milk, parmesan, sweet potato, and broccoli, stirring together. Add salt and pepper to taste.
4. Heat pan over medium heat. Pour mixture into pan, cooking for six minutes or until set at base.
5. Transfer pan to grill and cook beneath until top begins to brown.
6. Let set for 5 minutes and serve.
