Chicken breast stuffed with spinach and gorgonzola

A simple but elegant dish that will be sure to impress any dinner guest. You can substitute the cheese for a variety of your choosing if blue cheese isn’t your thing.

Ingredients:

Method:

  1. Preheat oven to 175°C. Grease baking dish and set aside.
  2. Mix gorgonzola cheese, spinach, garlic, salt and pepper in bowl.
  3. With a sharp knife, cut a deep pocket into thickest part of the chicken breast. Stuff with spinach and cheese mixture.
  4. Brush breasts with oil. Season with salt and pepper.
  5. Heat olive oil in frypan over high heat. Add chicken to pan and sear until golden. Flip and cook other side. Remove and place in greased baking dish. Cover with aluminium foil.
  6. Bake for 20 minute in oven or until chicken is browned. Serve with your choice of vegetables.
