Cinnamon bun pancakes

These sweet, cinnamon bun pancakes are almost enough to trick you into thinking you’re having dessert for breakfast.

Method:

  1. Filling: Stir butter, brown sugar and cinnamon together.
  2. Scoop into sandwich bag.
  3. To make the glaze, melt butter over low heat. Remove from heat and stir in cream cheese. Add powdered sugar and vanilla. Stir.
  4. To make the pancakes, combine flour, baking powder, salt, milk, eggs, and oil. Whisk together.
  5. Heat a sprayed pan over medium heat. Pour roughly a third of a cup of batter onto skillet in a circular form.
  6. Reduce heat to medium-low. Allow bubbles to form.
  7. After snipping the corner of the sandwich bag, squeeze filling thickly in a circular pattern beginning from the centre (like a cinnamon roll) of the pancake. Avoid edges.
  8. Once base is golden brown, flip and cook. Repeat for all remaining batter.
  9. Reheat glaze if necessary and drizzle over pancakes to serve.
