Cinnamon bun pancakes
These sweet, cinnamon bun pancakes are almost enough to trick you into thinking you’re having dessert for breakfast.
Ingredients:
Pancakes
- 1 cup of flour
- 2 teaspoons of baking powder
- ½ teaspoon of salt
- 1 egg, beaten
- 1 cup of milk
- 1 tablespoon of canola/vegetable oil
Glaze
- 60g of cream cheese
- 4 tablespoons of butter
- ¾ cup of powdered sugar
- ½ teaspoon of vanilla extract
Cinnamon filling
- 4 tablespoons of butter, melted
- ¼ cup plus 2 tablespoons of brown sugar
- ½ tablespoon of cinnamon
Method:
- Filling: Stir butter, brown sugar and cinnamon together.
- Scoop into sandwich bag.
- To make the glaze, melt butter over low heat. Remove from heat and stir in cream cheese. Add powdered sugar and vanilla. Stir.
- To make the pancakes, combine flour, baking powder, salt, milk, eggs, and oil. Whisk together.
- Heat a sprayed pan over medium heat. Pour roughly a third of a cup of batter onto skillet in a circular form.
- Reduce heat to medium-low. Allow bubbles to form.
- After snipping the corner of the sandwich bag, squeeze filling thickly in a circular pattern beginning from the centre (like a cinnamon roll) of the pancake. Avoid edges.
- Once base is golden brown, flip and cook. Repeat for all remaining batter.
- Reheat glaze if necessary and drizzle over pancakes to serve.
