Corn soup

Light, healthy and delicious, you can’t go past this easy-to-make soup that’s as tasty as it is good for you.

Ingredients:

Method:

  1. Boil corn cob in saucepan. Using a sharp knife scrape kernels from cob. Reserve two tablespoons of kernels for garnish.
  2. Blend remaining corn kernels with a little water into a smooth paste.
  3. Add milk, vegetable stock and remaining corn kernels. Bring to boil and let simmer for two to three minutes, stirring occasionally.
  4. Add corn flour dissolved in two tablespoons of water. Boil for three minutes or until the soup thickens. Season with salt and pepper. Garnish with chopped coriander.
