Gluten-free pizza with cauliflower base

This gluten and dairy-free pizza lets you enjoy all of the taste of regular pizza with none of the carbs. Plus, it’s not hard to make at all.

Makes: 8 slices

Ingredients:

Method:

  1. Preheat the oven to 200°C.
  2. In a food processor, whiz the cauliflower until it becomes similar to bread crumbs.
  3. Transfer the cauliflower to a frying pan with the olive oil and cook for about 10 minutes on a medium heat, stirring constantly.
  4. When cooked and mushy-like, take off the heat and transfer into a big bowl.
  5. Add the eggs, coconut flour and salt and pepper to the cooked cauliflower and mix well.
  6. Tip the entire cauliflower mixture onto a lined oven tray.
  7. Using your hands, form a pizza base (round or square is up to you) about 1cm thick.
  8. Bake in the oven for about 10 minutes, or until golden.
  9. Remove from the oven, spread the base with tomato paste then top with the mozzarella, cherry tomatoes, olives and mushrooms.
  10. Bake in the oven for a further 10-15 minutes, but keep an eye on it so it doesn't burn.
  11. To finish, top with fresh parsley and enjoy with a green salad.
