Grilled lime and coriander chicken
All it takes to turn chicken breasts from a meal into a refreshing dish (that is sure to impress) is a couple of ingredients.
Ingredients:
- 6 boneless, skinless chicken breasts,
Lime and coriander marinade
- Finely grated zest of 2 limes
- ¼ cup lime juice
- 2 teaspoon brown sugar
- 1 tablespoon minced fresh ginger
- ½ cup finely chopped coriander
- 1 tablespoon wholegrain mustard
- Salt and ground black pepper
Method:
1. Mix chicken with all other ingredients except salt. Chill for at least half an hour.
2. Slide chicken on to skewers, one slice per skewer, and season with salt. Chill until ready to cook.
3. Heat a barbecue hotplate or heavy pan and cook skewers over medium-high heat until fully cooked, about two minutes each side.
