Jerk chicken drumsticks
Jerk, a style of cooking native to Jamaica in which meat is rubbed with jerk spice, is a deliciously tangy way to enjoy chicken. Seasoned with plenty of spice, this recipe is not for the faint-hearted.
Serves: 4-6
Ingredients:
- 1 onion, chopped
- 2 tablespoon thyme
- 1 tablespoon ground rosemary
- 2 tablespoon vegetable oil
- 1 tablespoon ground allspice
- 2 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 2 teaspoon finely grated ginger
- 2 tablespoon sugar
- ½ cup lime juice
- 3 habanero chillies, seeded, chopped
- 2 garlic cloves, finely chopped
- 1.5kg chicken drumsticks
- 1 lime, juiced
- Salt and pepper
Method:
- To make jerk marinade, place onions, thyme, rosemary, oil, allspice, ginger, cinnamon, nutmeg, lime juice, sugar, chillies and garlic into a blender and pulse until a paste. Rub paste over chicken and place in bowl, cover and refrigerate overnight.
- Preheat barbeque to medium-high and grease the grill. Remove chicken from marinade and season with salt and pepper. Cook, turning, for 20 minutes or until chicken cooked through.
- Serve chicken with lime wedges.
