Jerk chicken drumsticks

Jerk, a style of cooking native to Jamaica in which meat is rubbed with jerk spice, is a deliciously tangy way to enjoy chicken. Seasoned with plenty of spice, this recipe is not for the faint-hearted.

Serves: 4-6

Method:

  1. To make jerk marinade, place onions, thyme, rosemary, oil, allspice, ginger, cinnamon, nutmeg, lime juice, sugar, chillies and garlic into a blender and pulse until a paste. Rub paste over chicken and place in bowl, cover and refrigerate overnight.
  2. Preheat barbeque to medium-high and grease the grill. Remove chicken from marinade and season with salt and pepper. Cook, turning, for 20 minutes or until chicken cooked through.
  3. Serve chicken with lime wedges.
