Kangaroo burgers
Kangaroo meat has almost no saturated fat and has more iron and double the vitamin B12 levels of other meats. So get some roo on your plate!
Serves: 4
Ingredients:
- 500g kangaroo mince
- 1 egg, lightly beaten
- 1 cup breadcrumbs
- 1 clove garlic, finely chopped
- 1 tbsp. parsley, chopped
- 1 tbsp. vegetable oil
- Salt and pepper, to taste
- Cos lettuce leaves
- 1 red onion, sliced
- Tomatoes, sliced
- 4 slices low-fat cheese
- 4 burger buns
Method:
- In a large bowl, combine mince, egg, breadcrumbs, garlic, parsley, salt and pepper and shape into patties.
- Chill for half an hour.
- Place oil in a large non-stick pan on a high heat. Reduce to medium and add patties, cooking for 5 minutes on each side or to preference.
- Place patties on the burger bun and top with a slice of cheese, lettuce and slices of tomato and onion. Add your favourite sauce and serve.
