Pasta Napolitana
This tasty pasta dish is so quick and easy to whip up, it’s sure to become a favourite mid-week dinner.
Ingredients:
- 400g penne pasta
- 2 tablespoons olive oil
- 2 shallots, diced
- 2 cloves garlic, crushed
- 400g cherry tomatoes, halved
- 2-3 tablespoons tomato puree
- 1 tablespoon mixed herbs
- 100ml water
- Salt and freshly ground black pepper
- Parmesan cheese
Method:
- Cook the penne according to directions on the packet.
- In a separate saucepan, heat the oil and add the shallots and garlic. Gently cook for two to three minutes until soft.
- Add the cherry tomatoes, puree, mixed herbs and water to the saucepan and bring to the boil. Simmer for 15 minutes until soft. Season with salt and pepper to taste.
- Drain the pasta and stir through the sauce.
- Serve hot with grated parmesan.
