Simple pea soup

This simple pea soup is so simple to make, and can make use of that bag of frozen peas you want to get rid of.

Method:

  1. In a large pot, heat the butter and oil together.
  2. When the butter is melted, add the celery and onion. Cook, stirring occasionally, until the onion and celery are soft. Add the garlic and thyme and stir through for a few seconds.
  3. Add the peas to the pot and stir to combine. Add the stock and water, and bring to a simmer over a high heat. Adjust the temperature to maintain a simmer and cook until the peas are tender (this should take about a minute).
  4. Use a blender or stick blender to puree the soup until it reaches the desired consistency.
  5. If you want your soup to be a little creamy, stir through the milk before gently heating through to desired temperature. Season with salt and pepper to taste.
