Pear and berry crumbles
Easy and delicious, you may want to make a double batch as these won’t last long!
Serves: 4
Ingredients:
- 4 large pears, peeled and cubed
- 200g caster sugar
- 250g frozen mixed berries, thawed
- 200g plain (all-purpose) flour
- 100g unsalted butter, cold, cut into small pieces
- 85g pistachio, shelled and roughly chopped
- Vanilla ice cream or cream, to serve (optional)
Method:
- Preheat oven to 190°C.
- Place pears in a medium pan, cover with half the sugar and cook on a medium heat for about 10 minutes, or until softened and releasing juices.
- Add the berries and bring back to the boil before removing from the heat.
- Spoon the fruit mixture into 4 ovenproof ramekins.
- Add the flour, butter and a pinch of salt in a large bowl, rubbing with your hands until the mixture achieves a breadcrumb-like consistency. Add pistachios and remaining sugar and stir to combine.
- Sprinkle the crumb mixture evenly over each ramekin.
- Bake for 20-25 minutes until golden, then remove and let cool slightly.
- Serve with ice cream or cream and enjoy.
