Classic pumpkin pie
This sweet pie is a dessert staple in North America for a reason – it’s delicious. Once you try it for yourself you’ll want to bake it all the time.
Ingredients:
- 2 cups of Queensland blue pumpkin, puréed (or any pumpkins that is one the sweeter side)
- 1 ½ cups of heavy cream
- ½ cup of brown sugar
- ⅓ cup of sugar
- ½ teaspoon of salt
- 2 eggs, plus 1 yolk
- 2 teaspoons of cinnamon
- 1 teaspoon of ground ginger
- ¼ teaspoon of ground cloves
- ¼ teaspoon of nutmeg
- ¼ teaspoon of ground cardamom
- ½ teaspoon of lemon zest
- Pie crust
Method:
- Preheat oven to 220°C.
- In a large bowl, beat eggs and mix in sugars, spices, salt, and lemon zest.
- Stir in cream and pumpkin purée.
- Pour mixture into pie shell.
- Bake for 15 minutes and lower temperature to 175°C.
- Bake for another 45 to 55 minutes or until cooked through. If the pie crust begins to burn, cover it with foil and return to the oven.
- Let cool. Serve with cream.
