Quesadilla with beans and cheese
Bring the taste of Mexico to mealtime with this quick and easy snack that is sure to tantalise the tastebuds.
Serves: 4
Ingredients:
- 8 flour tortillas
- 1 can black beans, drained
- 1 cup grated tasty cheese
- ½ lime, juiced
- 2 red onions, finely chopped
- 2 tablespoon coriander leaves, chopped
- 1 can corn kernels
- ¼ cup taco sauce
- Salt and pepper
Method:
- Roughly mash black beans in a bowl. Stir through corn kernels, red onions, taco sauce and season with salt and pepper.
- To make quesadillas, spread bean mixture evenly among four tortillas. Add cheese. Place another tortilla over the top.
- Heat a large frying pan over medium-low heat. Place one quesadilla in pan and cook for four to five minutes. Turn over and cook the other side for four to five minutes or until golden and crisp. Repeat with remaining quesadilla. Serve with salsa and guacamole.
