Rum and raisin ice cream
This creamy and delicious adults-only rum and raisin ice cream is the perfect indulgence as the weather heats up.
Serves: 6
Ingredients:
- 150g raisins
- 100ml dark rum
- 4 egg yolks
- ¼ cup golden syrup
- 1 teaspoon vanilla extract
- 1 tablespoon treacle
- 600ml thick cream
Method:
- Add egg yolks, golden syrup, vanilla extract and treacles in mixer and beat for five minutes or until thick. Add cream and beat for further two minutes. Place mixture in container and freeze for 45 minutes or until it’s beginning to harden.
- Meanwhile, add raisins and rum in pan. Bring to boil and cool.
- Fold through rum and raisin mixture into ice cream mixture until well combined. Return to freezer until firm.
