Sausage and cheese egg muffin
A tasty morning snack to take on the go, it’s also easy to make and even easier to eat.
Makes: Eight
Ingredients:
- 8 eggs
- 200g pork sausage
- 1 cup red capsicum, diced
- ½ cup spring onion, sliced
- Salt and pepper
- 1 cup cheddar cheese
- Olive oil
Method:
1. Preheat oven to 175°C. Grease an eight muffin cup tray.
2. Heat oil in large pan over medium to high heat. Add onions and capsicum. Cook for three minutes or until softened. Remove from pan and set aside. Add sausages to pan, breaking them apart as they cook. Remove from heat when cooked through.
3. Meanwhile beat eggs in bowl. Mix in sausage, cheese, onions and capsicum. Season with salt and pepper. Pour mixture evenly into muffin cups.
4. Bake for 20 to 25 minutes or until muffins are set in the middle. Cool for five minutes and serve.
