Simple potato gratin

This cheesy potato side dish is the perfect complement to any meal – although it’s really good enough to eat on its own!

Serves: 8

Ingredients:

  1. 3 tablespoon butter, plus extra for greasing
  2. 3 tablespoon plain flour
  3. 2 cups milk
  4. 1 ½ cups shredded Cheddar cheese
  5. 1 brown onion, finely diced
  6. 8 potatoes, peeled, cut into ½ cm slices
  7. Salt and pepper, to season

Method:

1. Preheat oven to 180°C. Grease a casserole dish with butter.

2. In a saucepan, melt butter over medium heat. Add flour and salt and pepper. Stir for one minute and then pour in milk. Bring to boil, cooking until mixture has thickened. Remove from heat and stir in cheese and onions until cheese is melted.

3. Layer potatoes on bottom of casserole dish. Add cheese mixture and continue to layer potatoes and cheese. Cover with aluminium foil and bake for one hour. Uncover and bake for a further 30 minutes or until browned. Serve.
