Smoked salmon omelette
Smoked salmon is a fantastic protein source, rich in healthy omega 3 fats. The combination of protein and good fats provides blood sugar control, satiety, exercise recovery and a metabolism geared to burning fat for fuel.
Serves: 1
Ingredients:
- ¼ teaspoon olive oil
- 2 eggs, beaten
- 1 spring onion, finely sliced
- 2 asparagus spears, trimmed and roughly chopped
- 50 g smoked salmon, torn into flakes
- Sea salt and freshly ground black pepper
- Handful of rocket
Method:
- Preheat the grill to high.
- Heat the oil in a small frying pan over a medium heat. Pour in the beaten egg and tilt the pan so it covers the base, then scatter over the spring onion, asparagus and smoked salmon pieces. Season generously with salt and pepper and cook for 3 minutes, then place the pan under the grill and cook for a further 3 minutes, or until the omelette is lightly browned and cooked to your liking.
- To serve, slide the omelette onto a plate and top with the rocket leaves.
