Spanish rice
An easy update to plain white rice for when your tastebuds are in the mood for a Spanish fiesta.
Serves: 4
Ingredients:
- 2 tablespoons olive oil
- 1 small onion, finely diced
- 1 clove of garlic, mined
- 1 cups of uncooked white rice
- 2 cups chicken stock
- 1 cup fresh tomato, diced
- Pinch of oregano
- Salt and pepper
Method:
1. Heat oil in large frypan on medium to high heat. Add onions and cook for three minutes. Stir in garlic and cook until onions are softened, around a minute more.
2. Add uncooked rice into pan, stirred often. When rice is coated in oil and begins to brown, stir in chicken stock and tomato. Bring to simmer and add pinch of oregano and season with salt and pepper. Cover pot and cook on lowest heat for 15 to 20 minutes or until liquid has been absorbed. Check the rice packet for instructions on times. Remove from heat and let sit for five minutes. Fluff up with a fork and serve.
