Toad in the hole

Yes, there are better-looking dishes out there, but don’t let its appearance fool you. This British favourite is a favourite for a reason – it’s simply delicious.

Serves: 4

Ingredients:

Method:

  1. Preheat oven to 200°C. Pour oil into a 5cm-deep rectangular pan and place into the oven until hot.
  2. Using tongs, add sausages to the oil and bake for 10 minutes, turning after 5.
  3. In the meantime, whisk eggs, milk and basil in a bowl. Sift the flour and salt into a separate bowl, making a well in the centre, and add the egg mixture. Mix until smooth.
  4. Remove the pan from the oven and pour the batter mixture over the sausages.
  5. Bake for 30 to 35 minutes, until golden.
  6. Serve immediately.

Tip: toad in the hole is best served with gravy, mashed potato and peas.
