Tuna mornay bake
Healthy and delicious, get your dose of omega-3 fatty acids with this no-fuss tuna mornay that is quick to make.
Ingredients:
- 200g elbow macaroni
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 teaspoons crushed garlic
- 425g can tuna chunks in spring water, drained
- 1/2 cup semi-dried tomatoes, chopped
- 1/2 cup pitted kalamata olives, halved
- 300ml cooking cream
- 1/4 cup shredded parmesan
- 2 tablespoons flat-leaf parsley, chopped, to serve
Method:
1. Cook pasta following packet directions and drain.
2. Meanwhile, heat oil in a frying pan over medium-high heat. Add onion and cook for one to two minutes or until softened. Add garlic. Cook for 30 seconds. Add tuna, tomatoes, olives and cream. Stir for two to three to combine and heat through.
3. Preheat grill on high. Put pasta mixture into an ovenproof dish and sprinkle with parmesan. Cook under grill for four to five minutes or until golden and bubbly. Sprinkle with parsley.
