Tzatziki dip
Tzatziki, a Greek youhurt and cucumber dip, is delicious served with flat bread, grilled meats or whatever you choose.
Ingredients:
- 2 telegraph cucumbers, peeled, halved lengthways, seeds removed
- 2 cups Greek natural yoghurt
- 2 garlic cloves, crushed
- 1 tablespoon fresh lemon juice
- 1 teaspoon ground cumin
- 1 tablespoon salt
- Pepper to season
- 1 tablespoon of fresh dill, chopped
Method:
- Grate cucumber into bowl. Sprinkle generously with salt and mix well. Press cucumber through a sieve to get rid of excess moisture.
- Combine yoghurt, garlic, oil, lemon juice and cumin in bowl. Stir through cucumber. Season with pepper to taste. Cover and refrigerate overnight. Serve.
