Veggie burgers with a yoghurt sauce
The burger gets a healthy makeover thanks to nutritious lentils. With the addition of a tangy yogurt-mint sauce, these are set to become a new favourite at dinner time.
Ingredients:
- 1 tablespoon fresh lemon juice
- 2 tablespoons olive oil
- 4 green onions, thinly sliced
- Coarse salt and ground pepper
- 5 bread rolls
- 1 can lentils, rinsed, drained, and patted dry
- 1 large egg
- ¼ cup thinly sliced fresh mint leaves
- ½ cup plain low-fat yogurt
- 1 lettuce
- 1 large tomato, cut in slices
NOTE: You may want to add seeds to your veggie patties for an extra healthy kick
Method:
1. Fit food processor with chopping blade. Process one bread roll until finely ground. Add lentils, egg, half the mint, one-teaspoon of salt, three-quarters of a teaspoon pepper, and remaining green onions. Pulse just until combined. NOTE: If you want to add seeds to your patties you should mix them in at this stage.
2. Dividing evenly, shape mixture into four three-and-a-half-inch patties. In a large fry pan, heat oil over medium. Cook burgers until browned and firm, four to five minutes per side.
3. To make yoghurt sauce, in a small bowl, combine yogurt, remaining mint, and remaining tablespoon lemon juice; season with salt and pepper. Place burgers on buns, and top with yogurt sauce, tomato and lettuce.
