Zucchini cheese casserole
If you’re after a twist on the usual cauliflower or broccoli cheese bake, this zucchini cheese casserole is for you.
Ingredients:
- 4 cups of zucchini, sliced
- 1 onion, chopped
- 2 garlic clove, crushed
- 1 tablespoons of butter
- 1 can evaporated milk
- ½ cup sour cream
- ½ cup cheddar cheese, shredded
Method:
1. Preheat oven to 180°C degrees.
2. Melt butter in large frypan and sauté zucchini, onion and garlic until vegetables are slightly tender.
3. Season with salt and pepper and stir in evaporated milk, sour cream and cheese.
4. Add mixture to casserole dish. Bake for 30 minutes or until cheese browns.
