Is there a best way to peel a boiled egg? A food scientist explains

<h1 class="theconversation-article-title"> </h1> <div class="theconversation-article-body"> <p>We’ve all been there – trying to peel a boiled egg, but mangling it beyond all recognition as the hard shell stubbornly sticks to the egg white. Worse, the egg ends up covered in chewy bits of adhesive membrane in the end.</p> <p>The internet is littered with various “hacks” that claim to prevent this problem. But there are several reasons why eggs can be hard to peel. Luckily, that means there are also science-based strategies we can use to avoid the problem.</p> <h2>Egg ‘peelability’ factors</h2> <p><a href="https://www.sites.ext.vt.edu/virtualfarm/poultry/poultry_eggparts.html">Eggs consist</a> of a hard, porous shell, an inner and outer membrane, the egg white (albumen), and a membrane-encased yolk at the centre. There is also an air cell between the inner and outer membrane next to the shell.</p> <figure class="align-right zoomable"><figcaption></figcaption></figure> <p>A lot of research was done in the late 1960s and 1970s on factors that affect the peelability of eggs after they’ve been boiled.</p> <p>One of these factors is the pH of the egg white. An <a href="https://www.sciencedirect.com/science/article/pii/S0032579119530589">early study</a> from the 1960s indicated that the pH of the egg white needs to be in the range of 8.7–8.9, quite alkaline, in order for the egg to be easier to peel.</p> <p>Storage temperature has a role to play, too. A <a href="https://www.sciencedirect.com/science/article/pii/S0032579119430861">study from 1963</a> showed that storing eggs at about 22 degrees Celsius (or 72 degrees Fahrenheit) gives a better peelability result than storage at lower temperatures of 13°C, or even fridge temperatures at 3–5°C.</p> <p>Of course, there is a risk of spoilage if eggs are stored at higher ambient temperatures.</p> <p>In the studies, an increase in storage time before boiling – using less fresh eggs – also increased the ease of peelability.</p> <h2>Step one: avoid fresh eggs</h2> <p>The fact that fresh eggs are harder to peel is relatively well known. Based on the factors above, there are a couple of reasons for this.</p> <p>For one, in a fresh egg the air cell is still quite small. As the egg ages, it (very) slowly loses moisture through the porous shell, increasing the size of the air cell while the rest of the egg contents shrink. A bigger air cell makes it easier to start the peeling action.</p> <p>Additionally, egg whites, although they already start out relatively alkaline, <a href="https://www.sciencedirect.com/science/article/pii/S0032579119325489">increase in pH</a> as the eggs age, also making them easier to peel.</p> <h2>Step two: water temperature</h2> <p>Some keen egg boiling pundits believe that <a href="https://www.taste.com.au/taste-test-kitchen/articles/you-boil-water-first-before-adding-eggs/jrp12gok">starting off with boiling water</a> and lowering it to a simmer before gently placing the eggs into it provides a better result. However, you want to do this with room temperature eggs to avoid them cracking due to a sudden temperature change.</p> <p>The reasoning behind this approach is that exposure to higher temperatures from the start of cooking also makes it easier for the membrane to come away from the shell and egg white.</p> <p>Furthermore, the quick hot start makes it easier for the egg white proteins to denature (change structure as they cook) and bond to each other, rather than to the membrane.</p> <p>After boiling eggs for the desired amount of time (typically 3–5 minutes for runny yolks, 6–7 minutes for jammy yolks, and 12–15 minutes for hard boiled), you can quench them in ice water. This should help the egg white to slightly shrink away from the shell, improving peelability.</p> <h2>Step three (optional): adding things to the water</h2> <p>Some other suggestions to improve peelability include adding salt to the boiling water, but this has mixed results. <a href="https://www.sciencedirect.com/science/article/pii/S0032579119325489">In one study</a>, this approach did actually improve peelability, but this effect was lost after eggs had been stored for longer periods.</p> <p>Acids and alkali have also <a href="https://patents.google.com/patent/US5053238A/en">been shown to aid eggshell peelability</a> or removal. The patent that describes this used rather harsh substances with the goal to dissolve away the shell.</p> <p>But based on this idea, you could try adding baking soda or vinegar to the water. With vinegar, the theory is that it attacks the calcium carbonate in the eggshell to then aid its removal. As for baking soda, because it’s alkaline, it could help detach the membrane from the shell.</p> <h2>Bonus: alternative cooking methods</h2> <p>There are other methods for hard-cooking eggs, such as <a href="https://onlinelibrary.wiley.com/doi/abs/10.1111/j.1745-4549.1977.tb00317.x">pressure steaming</a>, air-frying and even microwaving.</p> <p>In steaming eggs, some proponents theorise that water vapour permeates the eggshell, loosening the membrane from the egg white, and thereby making the egg much easier to peel.</p> <p>While studies have recently been done on the <a href="https://www.sciencedirect.com/science/article/pii/S2772275924000200#tbl0001">air-frying of other foods</a>, there is still scope to further understand how this style of cooking might affect eggshells and peelability.</p> <p>Lastly, once you have successfully separated the eggshells, don’t just throw them in the bin. There are lots of different uses for them, including compost, slug and snail deterrent in your garden, using them as little biodegradable pots for seedlings, or even something as advanced as <a href="https://www.unisq.edu.au/news/2024/10/egg-research">scaffolds for cancer research</a>.<!-- Below is The Conversation's page counter tag. Pagan loaves, Christian bread, a secular treat: a brief history of hot cross buns

<div class="theconversation-article-body">Hot cross buns aren’t just a sweet snack that appears around Easter. They carry centuries of storytelling in their dough. From ancient gods to modern supermarkets, these sticky spiced buns have crossed many borders and beliefs.</p> <p>Today, you can buy them in all kinds of flavours. But their story is far richer than chocolate chips and salted caramel.</p> <h2>Ancient beginnings</h2> <p>In some ancient cultures, bread was more than just food. It was a symbol of faith. Ancient Greeks baked small round loaves marked with crosses to honour their gods. According to some historians, these marks could represent the four seasons or <a href="https://www.ravenhook.com/bread-blog/hot-cross-buns">four phases of the moon</a>.</p> <p>Jewish people have also shared special bread during holy times like Passover, and scholars have debated whether these customs influenced <a href="https://catholiccuisine.blogspot.com/2009/04/hot-cross-buns-history.html">early Christian bread traditions</a>.</p> <p>Pagan Saxons worshipped a spring goddess named <a href="https://en.wikipedia.org/wiki/%C4%92ostre">Eostre</a>. They baked bread during springtime festivals to celebrate new life and longer days. The name “Eostre” is where we get the English word “Easter”. Over time, some of these springtime bread traditions blended with Christian customs.</p> <h2>From Pagan loaves to Christian buns</h2> <p>Early Christians started marking bread with a cross to show their devotion, and ate it throughout the year.</p> <p>They believed <a href="https://www.smh.com.au/goodfood/easter-2016-the-history-of-hot-cross-buns-and-where-to-find-the-best-20160314-gnc8od.html">the cross kept away evil spirits</a> and helped the dough rise. Over time, the Christian view of the bread marked with the cross shifted to focus on <a href="https://theconversation.com/the-roots-of-the-easter-story-where-did-christian-beliefs-about-jesus-resurrection-come-from-221071">Jesus’ crucifixion and became associated with Easter</a>.</p> <figure class="align-right zoomable"><figcaption></figcaption></figure> <p>By the Middle Ages, many bakers only kept the <a href="https://catholiccuisine.blogspot.com/2009/04/hot-cross-buns-history.html">cross on Good Friday bread</a>.</p> <p>According to popular tales, one 12th-century English monk made spiced buns marked with a cross on Good Friday, because that day is the “<a href="https://www.cathedralatl.org/goodfaithpostings/god-defeats-violence-at-the-cross/">Day of the Cross</a>”.</p> <p>Monks often used spices to show <a href="https://austenvariations.com/hot-cross-buns-a-good-friday-tradition/">the day was special</a>. These <a href="https://www.lavenderandlovage.com/2012/03/baking-for-easter-the-history-of-traditional-hot-cross-buns-and-hot-cross-bun-recipe.html">spiced buns</a> helped people remember the crucifixion of Christ and the <a href="https://biblestudylessons.net/articles/BurialSpices.html">spices used in his burial</a>.</p> <p>In 1592, Queen Elizabeth I restricted the sale of spiced bread and buns, perhaps because of religious tensions. England had broken away from the Catholic Church, and new Church of England officials worried that “holy” buns looked too much like <a href="https://www.english-heritage.org.uk/easter/a-history-of-hot-cross-buns/">Catholic superstition</a>. Others say it was an issue of bread prices and profits. Then again maybe they were just <a href="https://www.sandylanefarm.co.uk/c/bakery/easter-hot-cross-buns">too special</a> for just everyday.</p> <p>Under these laws, commercial bakers could only make spiced bread on Christmas, Easter and for funerals.</p> <h2>Good Friday and magic buns</h2> <p>By the 18th century, English street vendors sold “hot cross buns” on Good Friday. We even see an <a href="https://en.wikipedia.org/wiki/Hot_Cross_Buns_(song)">old rhyme</a> about them in Poor Robin’s Almanac in 1733, which says:</p> <blockquote> <p>Good Friday comes this month, the old woman runs, <br />With one a penny, two a penny, hot cross buns.</p> </blockquote> <p>Soon, people believed these Good Friday buns had <a href="https://anglicanfocus.org.au/2020/04/05/raisin-the-curtain-on-the-humble-hot-cross-bun/">magical powers</a>. Some hung them from kitchen rafters, believing they would never go mouldy. They kept them for protection against evil or illness. If someone felt sick, they <a href="https://food52.com/blog/19462-were-hot-cross-buns-the-first-food-fad-a-brief-and-fascinating-history?srsltid=AfmBOorsFIsP1cYUDsCRMIshNIU7Lh2Gq00L0OOgL-VwSAhw_O5Uc7I8">crumbled part of an old hot cross bun</a> into water, hoping it would cure them. Proof that tradition now serves taste, not fear.</p> <h2>An enduring symbol</h2> <p>Traditional buns contain dried fruit and spices like cinnamon and nutmeg, but many modern versions <a href="https://bakingwithgranny.co.uk/recipe/chocolate-chip-hot-cross-buns/">swap sultanas for chocolate chips</a> or add flavours like salted caramel, orange – or even <a href="https://vegemite.com.au/recipe/cheesy-vegemite-hot-cross-buns/#newsletter">Vegemite and cheese</a>. They have become a secular treat. Yet the crisscross pattern remains on top, hinting at the Christian origins.</p> <p>When you smell a fresh batch of these buns, you’re sharing an experience people enjoyed centuries ago. Ancient Egyptians, Greeks, Poles, Romans, Saxons, medieval monks and 18th-century street sellers all had their versions of spiced, crossed bread. Our ancestors didn’t eat 3 meals a day. So why do we?

<div class="theconversation-article-body"> <p>Pop quiz: name the world’s most famous trio? If you’re a foodie, then your answer might have been breakfast, lunch and dinner. It’s an almost universally accepted trinity – particularly in the Western world.</p> <p>But how did it come about?</p> <h2>The first meals</h2> <p><a href="https://theconversation.com/when-did-we-become-fully-human-what-fossils-and-dna-tell-us-about-the-evolution-of-modern-intelligence-143717#:%7E:text=Fossils%20and%20DNA%20suggest%20people,%3A%2050%2C000%2D65%2C000%20years%20ago">Early humans</a> were nomadic. Forming small communities, they would travel with the seasons, following local food sources.</p> <p>While we can only guess what daily mealtimes rhythms looked like, evidence dating back <a href="https://global.oup.com/academic/product/feast-9780199209019?cc=nz&lang=en&">30,000 years</a> from the South Moravia region, Czech Republic, shows people visited specific settlements time and again. They gathered around hearths, cooking and sharing food: the first signs of human “commensality”, the practice of eating together.</p> <p>One of the best-preserved hunter-gatherer sites we’ve found is <a href="https://global.oup.com/academic/product/feast-9780199209019?cc=nz&lang=en&">Ohalo II</a> – located on the shores of the modern-day Sea of Galilee (also called Lake Tiberias or Lake Kinneret) in Israel, and dating back some 23,000 years.</p> <p>In addition to several small dwellings with hearths, it provides evidence of diverse food sources, including more than 140 types of seeds and nuts, and various birds, fish and mammals.</p> <p>The development of <a href="https://education.nationalgeographic.org/resource/development-agriculture/">agricultural knowledge</a> some 12,000 years ago gave rise to permanent settlements. The earliest were in the Levant region (across modern-day Iraq, southwestern Iran and eastern Turkey), in an area called the “Fertile Crescent”.</p> <p>Permanent agriculture led to the production of a <a href="https://www.nationalgeographic.com/foodfeatures/evolution-of-diet/">surplus of food</a>. The ability to stay in one place with food on-hand meant the time it took to cook no longer mattered as much.</p> <p>It quickly became common to eat one <a href="https://www.bloomsbury.com/us/history-of-the-world-in-6-glasses-9780802718594/">light meal</a> early in the day, followed by a larger <a href="https://global.oup.com/academic/product/feast-9780199209019?cc=nz&lang=en&">hearth-prepared meal</a> later on. The specific timings would have varied between groups.</p> <h2>Eating together as a rule</h2> <p>The communal nature of foraging and hunting, and later farming, meant humans almost always ate their meals in the <a href="https://doi.org/10.1525/gfc.2009.9.3.42">company of others</a>. In the ancient city-state of Sparta, in the <a href="https://doi.org/10.2307/293895">4th century BCE</a>, these practices were codified as common main meals called <a href="https://doi.org/10.1525/gfc.2017.17.2.51"><em>syssitia</em></a> (meaning “eating together”).</p> <p>These meals were consumed at the end of the day in communal dining halls. Food was served by young boys to tables of 15 or so men who lived together and fought in the same <a href="https://www.perseus.tufts.edu/hopper/text?doc=Perseus%3Atext%3A1999.04.0063%3Aalphabetic+letter%3DS%3Aentry+group%3D5%3Aentry%3Dsyssitia-cn">military division</a>. The men gradually shared generational knowledge with the young boys, who themselves would join the tables by age 20.</p> <p>In the 5th century BCE, Greek historian Herodotus <a href="https://www.penguin.co.nz/books/the-histories-9780140455397">wrote about</a> how <em>syssitia</em> evolved from a Spartan military practice to having deep political meaning in society. Similarly, <a href="https://www.penguin.co.nz/books/the-republic-9780140455113">Plato</a> <a href="https://www.penguin.co.nz/books/the-laws-9780140449846">wrote</a> common meals were an integral component of civil society, and that missing a meal without good reason was a civic offence.</p> <p>By dining in <a href="https://doi.org/10.2307/293895">full view</a> of the rest of society, citizens were compelled to maintain self-discipline. Mealtime was also an opportunity for social linkage, and <a href="https://doi.org/10.1525/gfc.2017.17.2.51">important discussions</a> ranging from business deals to politics.</p> <p>The eating habits of Spartan women are missing in the texts, although it is implied they <a href="https://doi.org/10.1525/gfc.2017.17.2.51">ate at home</a>.</p> <h2>Bunches of lunches</h2> <p>Counter to the tough Spartan way of life, the Romans enjoyed their main meal, <a href="https://www.press.jhu.edu/books/title/1550/everyday-life-ancient-rome?srsltid=AfmBOooVPsJL24HR9woTdVNQwEG1uCU7q0k7r2beD-KD13m0KX-l1dSY"><em>cena</em></a>, earlier in the day, followed by a lighter meal just before bed.</p> <p>The northern European tribes tended towards two larger meals per day, as more <a href="https://doi.org/10.1002/ajpa.23071">sustenance</a> is required in colder climes. To the Vikings, these meals were known as <a href="https://www.historyonthenet.com/what-did-vikings-eat"><em>dagmal</em> and <em>nattmal</em></a>, or day meal and night meal. <em>Nattmal</em> was the cooked evening meal, while <em>dagmal</em> usually consisted of leftover <em>nattmal</em> with the addition of bread and beer or mead.</p> <p>In Australia, evidence suggests Aboriginal peoples tended toward a <a href="https://www.tandfonline.com/doi/full/10.1080/03122417.2022.2089395">daily single meal</a>, which aligns with the predominant method of cookery: slow-cooking with hot coals or rocks in an <a href="https://doi.org/10.1080/03122417.2022.2089395">earth oven</a>. This underground oven, used by Aboriginal and also Torres Strait Islander communities, was referred to as a <a href="https://www.facebook.com/watch/?v=745326709638881&t=0"><em>kup murri</em></a> or <a href="https://www.sbs.com.au/food/the-cook-up-with-adam-liaw/recipe/slow-cooker-kap-mauri/lfza7eqs4"><em>kap mauri</em></a> by some groups.</p> <p>This is similar to other Indigenous preparations throughout the Pacific, such as the New Zealand Māori <a href="https://doi.org/10.1080/15528014.2024.2381305"><em>hāngī</em></a>, Hawaiian <a href="https://www.jstor.org/stable/20707103?seq=1"><em>imu</em></a>, Fijian <a href="https://www.proquest.com/docview/1021389307?accountid=8440&parentSessionId=605Pt1iTclBEC77VSlZvrnxxY%2Bdc7e%2Bx9pT4MgRLPqQ%3D&sourcetype=Dissertations%20&%20Theses"><em>lovo</em></a>, and even the Mayan <a href="https://doi.org/10.1007/s12231-012-9207-2"><em>píib</em></a>.</p> <p>The once-daily meal would have been supplemented with snacks throughout the day.</p> <h2>Three’s the magic number</h2> <p>The timing of meals was heavily influenced by class structure, local climate and people’s <a href="https://www.wiley.com/en-us/Cuisine+and+Culture%3A+A+History+of+Food+and+People%2C+3rd+Edition-p-9780470403716">daily activities</a>. Practicality also played a part. Without reliable lighting, meals had to be prepared and eaten before dark. In settled parts of Northern Europe, this could be as early as 3pm.</p> <p>So how did we go from one or two main meals, to three? The answer may lie with the British Royal Navy.</p> <p>Since its inception in the 16th century, the navy served <a href="https://www.historyhit.com/what-did-sailors-in-the-georgian-royal-navy-eat/">three regular meals</a> to align with the shipboard routine. Workers ate breakfast and dinner at home, before and after work, while lunch was eaten with coworkers at a set time.</p> <p>With minimal breaks, and no time for snacking, three substantial meals became necessary.</p> <h2>The fall of the holy trinity</h2> <p>Today, many factors impact the <a href="https://doi.org/10.1016/j.cmet.2015.09.005">time and frequency</a> of our meals, from long work commutes to juggling hobbies and social obligations.</p> <p>The COVID pandemic also impacted how and what we eat, leading us to eat larger amounts of <a href="https://doi.org/10.1016/j.jhealeco.2022.102641">higher calorie foods</a>. The rapid growth of <a href="https://doi.org/10.1017/S1368980020000701">delivery services</a> also means a meal is no more than a few minutes away from most people.</p> <p>All of this has resulted in mealtimes becoming less rigid, with social meals such as <a href="https://rowman.com/ISBN/9781442229433/Brunch-A-History">brunch</a>, <a href="https://www.harpercollins.co.nz/9780261102354/the-fellowship-of-the-ring/">elevenses</a> and <a href="https://rowman.com/ISBN/9781442271029/Afternoon-Tea-A-History">afternoon teas</a> expanding how we <a href="https://doi.org/10.3390/ijerph18126235">connect over food</a>. And mealtimes will continue to <a href="https://doi.org/10.1525/gfc.2013.13.3.32">evolve</a> as our schedules become ever more complicated.<!-- Below is The Conversation's page counter tag. "Patrons yelled to stop": Comedy Festival rocked by death on opening night

<p>Melbourne’s comedy scene was rocked by tragedy on the opening night of this year’s International Comedy Festival, as an attendee suffered a fatal medical episode mid-show, leading to the abrupt cancellation of the event.</p> <p>The distressing incident occurred during comedian Michael Hing’s performance at the Palais Theatre, where a man on the upper level of the venue suffered a medical emergency. Attendees quickly responded, providing CPR in the dark while Hing remained unaware of the unfolding crisis.</p> <p>“[It] would have been at least 15 mins worth before the show stopping, and [it] only stopped as patrons yelled to stop performing,” one audience member told <em>The Daily Mail</em>.</p> <p>Another witness expressed dismay over the handling of the situation, stating, “I can’t believe they [the organisers] didn’t communicate with backstage to halt the show, and that it took the public to yell out to the comedian to stop for something to happen.”</p> <p>The Melbourne International Comedy Festival addressed the incident in a statement posted on Instagram, confirming the show’s cancellation.</p> <p>“Melbourne International Comedy Festival regrets to confirm that there was a medical emergency while the Opening Night Allstars Supershow was taking place this evening at the Palais Theatre,” a festival spokesman said. “The show was stopped and cancelled. The Festival will be in touch with all ticket holders tomorrow.”</p> <p>Victoria Police later confirmed the man’s death. “Police will prepare a report for the Coroner following the death of a man in St Kilda on Wednesday, 26 March,” a spokesman said. “Emergency services were called to a theatre on Lower Esplanade about 9pm. A man, who is yet to be formally identified, died at the scene.”</p> <p>Health worker Andrea Bortoli, who was sitting in the upper level’s front row, described the distressing scene as people began leaving and it “became quite obvious that someone was getting CPR. It was just obviously really distressing, so we wanted to leave,” she told <em>The Age</em>. </p> <p>Eventually, the theatre lights were turned on, and patrons were informed that the show had been cancelled.</p> <p>The Allstars Gala is one of the most anticipated nights of the festival, bringing together some of the biggest names in comedy. New evidence points to fossilised remains of Noah's Ark

<p>A team of international researchers has reignited a centuries-old debate after uncovering new evidence suggesting that the Durupinar Formation in Turkey could be the fossilised remains of Noah’s Ark.</p> <p>According to <em>The Jerusalem Post</em>, experts have found that the boat-shaped mound – long believed by some to be the biblical vessel – was likely submerged underwater during a catastrophic flood approximately 5,000 years ago.</p> <p>Located roughly 35km south of Mount Ararat’s summit, near the Iranian border in Turkey’s Dogubayazit district, the 164-metre geological structure has fascinated researchers and religious scholars for decades. Composed primarily of limonite, an iron-rich ore, the formation closely matches the biblical description of Noah’s Ark. The Book of Genesis describes the ark’s dimensions as “a length of three hundred cubits, its width fifty cubits, and its height thirty cubits,” which align with the measurements of the Durupinar site.</p> <p>Since 2021, an international team has been studying the formation to determine whether it could indeed be a massive preserved vessel. Their latest findings provide compelling evidence that the region was once covered in water.</p> <p>Soil samples taken from the site contain traces of clay-like materials, marine deposits, and even remnants of seafood—suggesting the area was submerged between 3,500 and 5,000 years ago, around the same time as the biblical flood.</p> <p>Professor Faruk Kaya, one of the lead researchers, stated, “According to the initial results, it’s believed there were human activities in this region since the Chalcolithic period.” The presence of marine deposits further supports the theory that the area once harbored aquatic life before being inundated.</p> <p>“Our studies show that this region harboured life in that period and that, at some point, it was covered by water, which reinforces the possibility that a catastrophic event of great magnitude occurred,” the researchers explained.</p> <p>The Durupinar Formation was first discovered in 1948 and has since been the subject of intense debate. While some believe it could be the fossilized remains of Noah’s Ark, others argue it is simply a natural rock formation shaped by geological forces.</p> <p>Religious texts from Christianity, Judaism and Islam all recount the story of Noah and the ark, but the scientific community has yet to confirm its historical accuracy. Nevertheless, recent findings have fueled speculation that the biblical flood may have a basis in reality.</p> <p>“The evidence suggests that the story might have a basis in reality,” researchers concluded, leaving the door open for further exploration and debate.</p> <p><em>Image: Facebook</em></p>

Tennis legends immortalised with special honour

<p>Tennis legends and grand slam champions Ash Barty and Evonne Goolagong Cawley have bene immortalised as one-of-a-king Barbie dolls in honour of International Women's Day. </p> <p>The tennis duo were recognised together by Mattel's celebration of "the power of friendship".</p> <p>Barty opened up about the surreal experience, saying, "I think my first reaction was almost disbelief. Never in my wildest dreams did I ever think that I would be a Barbie myself. I think it's just such an incredible experience to be a part of."</p> <p>Barty's doll wears a replica of the outfit she wore while winning at the 2021 Wimbledon, while Goolagong Cawley's Barbie is wearing the skirt and shirt combination she wore to award Barty with her trophy.</p> <p>Goolagong Cawley confessed: "It's just absolutely amazing. 1975 was declared International Women’s Year. 50 years on, the ‘revolution in our heads’ is still being fought

<div class="theconversation-article-body"><em><a href="https://theconversation.com/profiles/marian-sawer-3336">Marian Sawer</a>, <a href="https://theconversation.com/institutions/australian-national-university-877">Australian National University</a></em></p> <p>In December 1972, the same month the Whitlam government was first elected, the United Nations General Assembly proclaimed 1975 as International Women’s Year (IWY). This set in train a series of world-changing events, in which Australia was to play a significant part.</p> <p>The aim of IWY was to end discrimination against women and enable them to participate fully in economic, social and political life. Fifty years later, such participation has become an indicator of development and good governance. But the full promise of International Women’s year has yet to be fulfilled, hampered by pushback and the scourge of gender-based violence.</p> <h2>‘The greatest consciousness-raising event in history’</h2> <p><a href="https://history.duke.edu/books/international-womens-year-greatest-consciousness-raising-event-history">Dubbed</a> “the greatest consciousness-raising event in history”, the UN’s first World Conference on Women took place in Mexico City in June 1975. Consciousness-raising had been part of the repertoire of women’s liberation. Now it was taken up by government and intergovernmental bodies.</p> <p>The Mexico City conference was agenda-setting in many ways. The Australian government delegation, led by Elizabeth Reid, helped introduce the world of multilateral diplomacy to the language of the women’s movement. As Reid said:</p> <blockquote> <p>We argued that, whenever the words “racism”, “colonialism” and “neo-colonialism” occurred in documents of the conference, so too should “sexism”, a term that had not to that date appeared in United Nations documents or debates.</p> </blockquote> <p>Reid held the position of women’s adviser to the prime minister. In this pioneering role, she had been able to obtain government commitment and funding for Australia’s own national consciousness-raising exercise during IWY.</p> <p>A wide range of small grants promoted attitudinal change – “the revolution in our heads” – whether in traditional women’s organisations, churches and unions, or through providing help such as Gestetner machines to the new women’s centres.</p> <figure><iframe src="https://www.youtube.com/embed/UinNIfzUglQ?wmode=transparent&amp;start=0" width="440" height="260" frameborder="0" allowfullscreen="allowfullscreen"></iframe></figure> <p>IWY grants explicitly <a href="https://pmtranscripts.pmc.gov.au/release/transcript-3519">did not include</a> the new women’s services, including refuges, women’s health centres and rape crisis centres. Their funding was now regarded as an ongoing responsibility for government, rather than suitable for one-off grants.</p> <p>IWY began in Australia with a televised conversation on New Year’s Day between Reid and Governor-General John Kerr on hopes and aspirations for the year. On International Women’s Day (March 8), <a href="https://pmtranscripts.pmc.gov.au/sites/default/files/original/00003643.pdf">Prime Minister Gough Whitlam’s speech</a> emphasised the need for attitudinal change:</p> <blockquote> <p>Both men and women must be made aware of our habitual patterns of prejudice which we often do not see as such but whose existence manifests itself in our language and our behaviour.</p> </blockquote> <p>The Australian postal service celebrated the day by releasing a stamp featuring the IWY symbol, showing the spirit of women breaking free of their traditional bonds. At Reid’s suggestion, IWY materials, including the symbol, were printed in the purple, green and white first adopted by Emmeline Pankhurst in 1908 and now known as the suffragette colours.</p> <h2>Policy power</h2> <p>Inside government, Reid had introduced the idea that all Cabinet submissions needed to be analysed for gender impact. After the Mexico City conference, this idea became part of new international norms of governance.</p> <p>Following the adoption at the conference of the World Plan of Action, the idea that governments needed specialised policy machinery to promote gender equality was disseminated around the world.</p> <p>Given the amount of ground to be covered, IWY was expanded to a UN Decade for Women (1976–85). By the end of it, 127 countries <a href="https://www.un.org/womenwatch/daw/egm/nationalm2004/docs/EGM%20final%20report.26-jan-05.pdf">had established</a> some form of government machinery to advance the status of women. Each of the successive UN world conferences (Copenhagen 1980, Nairobi 1985, Beijing 1995) generated new plans of action and strengthened systems of reporting by governments.</p> <p>The Fourth World Conference on Women in Beijing was a high point. Its “platform for action” provided further impetus for what was now called “gender mainstreaming”. By 2018, every country recognised by the UN except North Korea had established government machinery for this purpose.</p> <p>The global diffusion of this policy innovation was <a href="https://www.jstor.org/stable/3096100">unprecedented</a> in its rapidity. At the same time, Australia took the lead in another best-practice innovation. In 1984, the Commonwealth government pioneered what became known as “<a href="https://www.tandfonline.com/doi/epdf/10.1080/1354500110110029?needAccess=true">gender budgeting</a>”. This required departments to disaggregate the ways particular budgetary decisions affected men and women.</p> <p>As feminist economists pointed out, when the economic and social division of labour was taken into account, no budgetary decision could be assumed to be gender-neutral. Governments had emphasised special programs for women, a relatively small part of annual budgets, rather than the more substantial impact on women of macro-economic policy.</p> <p>Standard-setting bodies such as the OECD helped promote gender budgeting as the best way to ensure such decisions did not inadvertently increase rather than reduce gender gaps.</p> <p>By 2022, gender budgeting had been taken up around the world, including in 61% of OECD countries. Now that it had become an international marker of good governance, Australian governments were also <a href="https://www.oecd.org/en/publications/gender-equality-in-australia_54c8b400-en.html">reintroducing it</a> after a period of abeyance.</p> <figure><iframe src="https://www.youtube.com/embed/pH9V0GIGr-4?wmode=transparent&amp;start=0" width="440" height="260" frameborder="0" allowfullscreen="allowfullscreen"></iframe></figure> <h2>Momentum builds</h2> <p>In addition to such policy transfer, new frameworks were being adopted internationally. Following IWY, the UN Convention on the Elimination of All Forms of Discrimination against Women (CEDAW) was adopted in 1979. CEDAW became known as the international bill of rights for women, and has been ratified by 189 countries. This is more than any other UN Convention except that on the rights of the child.</p> <p>All state parties to CEDAW were required to submit periodic reports to the UN on its implementation. Non-government organisations were encouraged to provide shadow reports to inform the questioning of government representatives. This oversight and dialogue relating to gender equality became part of the norm-building work of the UN.</p> <p>However, this very success at international and regional levels helped fuel “<a href="https://theloop.ecpr.eu/feminist-governance-here-to-stay-or-gone-tomorrow/">anti-gender movements</a>” that gathered strength after 1995. No more world conferences on women were held, for fear there would be slippage from the standards achieved in Beijing.</p> <p><a href="https://www.oecd.org/en/publications/gender-equality-in-australia_54c8b400-en.html">In Australia</a>, the leveraging of international standards to promote gender equality has been muted in deference to populist politics. It became common to present the business case rather than the social justice case for gender-equality policy, even the cost to the economy of gender-based violence (<a href="https://plan4womenssafety.dss.gov.au/resources/useful-statistics/">estimated by KPMG to be $26 billion in 2015–16</a>).</p> <h2>The battle continues</h2> <p>Fifty years after IWY, Australia is making up some lost ground in areas such as paid parental leave, work value in the care economy, and recognition of the ways economic policy affects women differently from men.</p> <p>However, all of this remains precarious, with issues of gender equality too readily rejected as part of a “woke agenda”.</p> <p>The world has become a different place from when the Australian government delegation set out to introduce the UN to the concept of sexism. In Western democracies, women have surged into male domains such as parliaments. Australia now has an almost equal number of women and men in its Cabinet (<a href="https://www.pmc.gov.au/resources/ministry-list-20-january-2025">11 out of 23 members</a>).</p> <p>But along with very different expectations has come the resentment too often being mobilised by the kind of populist politics we will likely see more of in this election year.<!-- Below is The Conversation's page counter tag. Couple forced to sit next to dead passenger on international flight

<p>A couple has recalled the distressing moment they were forced to sit next to a dead passenger on an international flight. </p> <p>Mitchell Ring and Jennifer Colin were en route from Melbourne to Venice with Qatar Airlines, via the city of Doha, when a female passenger died mid-flight. </p> <p>The crew decided to put the dead passenger's body in Ring and Colin's row for the remaining four hours of the flight, which the couple said left them traumatised.</p> <p>The incident unfolded when a woman walked out of the bathroom and collapsed next to their row.</p> <p>"Unfortunately the lady couldn't be saved, which was pretty heartbreaking to watch," Ring told <a href="https://9now.nine.com.au/a-current-affair/couple-forced-to-sit-next-to-corpse-for-hours-on-flight/24d51b24-9a7f-4e6c-be04-ec2dbf6df1c4" target="_blank" rel="noopener"><em>A Current Affair</em></a>.</p> <p>"They tried to wheel her up towards business class, but she was quite a large lady and they couldn't get her through the aisle."</p> <p>"They looked a bit frustrated, then they just looked at me and saw seats were available beside me, my wife was on the other side, we were in a row of four."</p> <p>"They said, 'Can you move over please?' and I just said, 'Yes no problem'. Then they placed the lady in the chair I was in."</p> <p>The couple claims cabin crew did not offer them a different seat to move to, with a passenger in the row behind them instead offering a spare seat to nervous-flyer Colin.</p> <p>"There were a few spare seats I could see around us," Ring said.</p> <p>Ring spent the remaining hours of the flight in the same row as the corpse, saying he was told to stay seated after the plane landed as medical crews took off blankets covering the body.</p> <p>"I can't believe they told us to stay … it wasn't nice," he said.</p> <p>The couple said they have not been offered any support from Qatar Airways, with Ring saying, "They have a duty of care towards their customers as well as their staff, we should be contacted to make sure, do you need some support, do you need some counselling."</p> <p>"I don't really know how I feel and would like to speak to somebody to make sure I'm alright."</p> <p>Colin said the pair was now trying to make the best of their Italian holiday of a lifetime after the disturbing flight. </p> <p>"I'm trying to make the best of a pretty hard situation, but, you know, we're on holidays so we're really trying to have a good time," she said.</p> <p>Since <em>A Current Affair</em> spoke to the couple, Qatar Airways says it is looking into the situation.</p> <p><em>Image credits: A Current Affair </em></p>

Summer holidays haven’t changed much since ancient Greece and Rome (except maybe the sand wrestling)

<div class="theconversation-article-body"> <p><em><a href="https://theconversation.com/profiles/konstantine-panegyres-1528527">Konstantine Panegyres</a>, <a href="https://theconversation.com/institutions/the-university-of-melbourne-722"><em>The University of Melbourne</em></a></em></p> <p>Imagine a summer holiday at a seaside resort, with days spent sunbathing, reading books, exploring nature and chatting with friends.</p> <p>Sounds like it could be anywhere in Australia or New Zealand in January, doesn’t it?</p> <p>This is also how the Roman emperor <a href="https://oxfordre.com/classics/display/10.1093/acrefore/9780199381135.001.0001/acrefore-9780199381135-e-3508?product=orecla">Julian</a> spent his summers in the 4th century CE. Towards the end of 357 CE, Julian wrote a <a href="https://www.loebclassics.com/view/emperor_julian-letters/1923/pb_LCL157.79.xml?rskey=Sa5rUn&amp;result=1&amp;mainRsKey=pqeNrD">letter</a> to his friend Evagrius, telling him how he spent his holidays at his grandmother’s estate as a boy and young man:</p> <blockquote> <p>Very peaceful it is to lie down there and glance into some book, and then, while resting one’s eyes, it is very agreeable to gaze at the ships and the sea.</p> <p>When I was still hardly more than a boy I thought that this was the most delightful summer residence, for it has, moreover, excellent springs and a charming bath and garden and trees.</p> </blockquote> <p>As Julian got older, though, he had less time for summer holidays. Work consumed him. Even when he was on a break, he couldn’t fully relax.</p> <p>This might sound familiar, too. It seems very little has changed from the days of the ancient Greek and Roman empires when it comes to finding time to unwind – and being on holidays, too.</p> <h2>Finding time for a break</h2> <p>Taking time off was important in ancient Greek and Roman times. Even <a href="https://www.tandfonline.com/doi/pdf/10.1080/00397677908590731">Greek and Roman slaves</a> were permitted to take a few holidays each year.</p> <p>Not everyone could enjoy their holidays, however.</p> <p>In 162 CE, <a href="https://oxfordre.com/classics/display/10.1093/acrefore/9780199381135.001.0001/acrefore-9780199381135-e-984">Marcus Aurelius</a>, then emperor of Rome, took four days of holiday at a resort in Alsium, a city on the coast of modern-day Italy.</p> <p>According to his friend <a href="https://oxfordre.com/classics/display/10.1093/acrefore/9780199381135.001.0001/acrefore-9780199381135-e-1846">Marcus Cornelius Fronto</a> (c. 95-166 CE), though, the emperor could not stop working. In a letter, Fronto <a href="https://www.loebclassics.com/view/marcus_cornelius_fronto-correspondence/1919/pb_LCL113.5.xml?mainRsKey=Q5rXrd&amp;result=1&amp;rskey=fAbCGr">criticises</a> Marcus for continuing to work hard rather than sleeping in, exploring the seaside, rowing on the ocean, bathing and feasting on seafood.</p> <p>Fronto amusingly says that Marcus, rather than enjoy his holiday, has instead “declared war on play, relaxation, good living, and pleasure”.</p> <h2>Going to the seaside</h2> <p>Relaxing by the coast was one of the things people in ancient Greece and Rome most enjoyed doing in the summer.</p> <p>The rich built summer residences on the coast, while people of all walks of life flocked to seaside resorts to enjoy the fresh air and cool water.</p> <p>The orator <a href="https://oxfordre.com/classics/display/10.1093/acrefore/9780199381135.001.0001/acrefore-9780199381135-e-3675">Libanius</a> (314-393 CE) <a href="https://www.loebclassics.com/view/libanius-oration_45_emperor_prisoners/1977/pb_LCL452.165.xml?rskey=EVUxsK&amp;result=1&amp;mainRsKey=ISthry">wrote</a> that the people who really enjoy life the most are those who have the freedom to “drive to their estates, visit other towns, buy land, and visit the seaside”.</p> <p>Health tourism was also a popular reason why people came to the seaside. Many ancient doctors recommended sea water and air as cures for all kinds of health problems, especially those related to the skin and respiratory system.</p> <p>For example, the doctor <a href="https://oxfordre.com/classics/display/10.1093/acrefore/9780199381135.001.0001/acrefore-9780199381135-e-705">Aretaeus of Cappadocia</a> (c. 150-200 CE) <a href="https://books.google.com.au/books?id=v4gIAAAAIAAJ&amp;pg=PA463&amp;dq=Aretaeus+sea+water&amp;hl=en&amp;newbks=1&amp;newbks_redir=0&amp;sa=X&amp;ved=2ahUKEwjh-f6OiuCJAxW4dPUHHXQQH5oQ6AF6BAgEEAI#v=onepage&amp;q=Aretaeus%20sea%20water&amp;f=false">recommended</a> bathing in sea water, wrestling on sand and living by the sea as therapies for those who get frequent headaches.</p> <h2>Travelling abroad</h2> <p>Visiting foreign places was another of the things people in ancient Greece and Rome most enjoyed doing on their summer holidays.</p> <p>For the Romans, trips to see Greece – and in particular Athens – were especially popular.</p> <p>The Roman general <a href="https://oxfordre.com/classics/display/10.1093/acrefore/9780199381135.001.0001/acrefore-9780199381135-e-3396?rskey=xWdUMg&amp;result=1">Germanicus</a> (15 BCE–19 CE) went on a tour of Greece in 18 CE, travelling from Athens eastward to Euboea, Lesbos, the coast of Asia Minor and then to Byzantium and Pontus.</p> <p>According to the Roman historian <a href="https://oxfordre.com/classics/display/10.1093/acrefore/9780199381135.001.0001/acrefore-9780199381135-e-6205">Tacitus</a>, Germanicus was motivated by a desire to see famous ancient sites. Like many Romans, he was fascinated by the old stories of the Greek past, so <a href="https://www.loebclassics.com/view/tacitus-annals/1931/pb_LCL249.469.xml">he was</a> “eager to make the acquaintance of those ancient and storied regions”.</p> <p>Another popular destination for ancient Greeks and Romans was Egypt, which had always been regarded as a land of wonder.</p> <p>Roman tourists could catch regular boats from <a href="https://www.romanports.org/en/the-ports/88-puteoli.html">Puteoli</a> to the great Egyptian city <a href="https://www.britannica.com/place/Alexandria-Egypt">Alexandria</a>. The trip took anywhere from one to two weeks, stopping along the way in Sicily and Malta.</p> <p>Once there, the highlights were typically the great Nile River and Pyramids. Tourists marvelled at the immense temples and walls of hieroglyphic writing.</p> <p>When Germanicus visited Egypt in 19 CE, he was so curious about the meaning of the hieroglyphics that he <a href="https://www.loebclassics.com/view/LCL249/1931/volume.xml">asked</a> an old Egyptian priest to translate some for him.</p> <p>In Alexandria, another attraction was the tomb of <a href="https://www.oxfordreference.com/display/10.1093/oi/authority.20110803095401572">Alexander the Great</a> (356-323 BCE). His body was stored in honey in a coffin made of glass. Ordinary tourists were not allowed to visit it, but VIPs like Roman emperors were.</p> <p>Tourists might also have enjoyed the different vibe in Alexandria. According to the Greek orator <a href="https://www.britannica.com/biography/Dio-Chrysostom">Dio of Prusa</a> (c. 40-110/120 CE), the atmosphere in the coastal city was relaxed, with plenty of music, chariot racing and good food.</p> <h2>Lazy summer days</h2> <p>We can probably all relate to what the writer <a href="https://oxfordre.com/classics/display/10.1093/acrefore/9780199381135.001.0001/acrefore-9780199381135-e-5134">Pliny the Younger</a> (61/62-112 BCE) said about his summer break.</p> <p>Writing on a holiday in Tuscany, he <a href="https://www.loebclassics.com/view/pliny_younger-letters/1969/pb_LCL059.95.xml?rskey=Mdlmkl&amp;result=1">said</a> he can only work “in the lazy way to be expected during a summer holiday”. Four travel trends expected to boom in 2025

<p dir="ltr">The way we see the world changes each year as more travel trends come and go. </p> <p dir="ltr">According to a new survey from <em><a href="http://booking.com/">booking.com</a></em>, travellers are desperate for unique and new experiences, as four big trends are set to skyrocket in 2025. </p> <p dir="ltr"><strong>Noctourism</strong></p> <p dir="ltr">Noctourism, or travelling to experience the night in all its glory, is on the rise in 2025.</p> <p dir="ltr">Noctourism will see travellers seeking out dark-sky zones to marvel at the solar system and engage in things like stargazing activities, constellation tracking and once-in-a-lifetime cosmic events. </p> <p dir="ltr">Others had a different take on noctourism, with 60% of people admitting they want to travel to places less light polluted to experience the wonders of a clear night sky.</p> <p dir="ltr">Aussie travellers are also seeing this type of holiday as a way of avoiding harmful UV rays, with 56 per cent saying they want to reduce their time in the sun while on holiday.</p> <p dir="ltr"><strong>Longevity retreats </strong></p> <p dir="ltr">Taking a new twist on the classic ‘eat, pray, love’ holiday is the new phenomenon of ‘longevity and wellness retreats’, where the focus is on the “pursuit of a longer, healthier life”.</p> <p dir="ltr">Booking.com data shows that 60% of travellers are interested in these unique holidays in 2025, with travellers planning health-focused trips around experiences designed to extend their lifespan. </p> <p dir="ltr">These breaks will see the popularity of cutting-edge experiences like red light therapy, cryotherapy and stem cell treatments spill over into the travel industry as people seek wellness breaks that offer long-term benefits beyond in-the-moment relaxation. </p> <p dir="ltr"><strong>AI-led holidays </strong></p> <p dir="ltr">While planning holidays can be fun, others can find the experience overwhelming and stressful.</p> <p dir="ltr">Because of this, many are turning to AI to help book their perfect getaway. </p> <p dir="ltr">60 percent of Aussie travellers are keen to use technology to find less crowded spots or hidden gems, and 29 per cent are interested in utilising AI for trip curation. </p> <p dir="ltr"><strong>Multigenerational trips </strong></p> <p dir="ltr">The trend of Spending Kids’ Inheritance (SKI) is set to continue in 2025, as nearly half of travellers would prefer to spend their money on a trip of a lifetime rather than leaving an inheritance. </p> <p dir="ltr">This trend is particularly strong among baby boomers and the silent generation, but it's not all bad news for the younger family members.  </p> <p dir="ltr">Multigenerational trips will rise in 2025, with family trips prioritising shared experiences over material wealth, with 80% of boomers happy to fund their children’s and grandchildren’s holidays.</p> <p dir="ltr"><em>Image credits: Shutterstock </em></p>

Are eggs good or bad for our health?

<div class="theconversation-article-body"> <p><em><a href="https://theconversation.com/profiles/lauren-ball-14718">Lauren Ball</a>, <a href="https://theconversation.com/institutions/the-university-of-queensland-805">The University of Queensland</a> and <a href="https://theconversation.com/profiles/karly-bartrim-2317677">Karly Bartrim</a>, <a href="https://theconversation.com/institutions/the-university-of-queensland-805">The University of Queensland</a></em></p> <p>You might have heard that eating too many eggs will cause high cholesterol levels, leading to poor health.</p> <p>Researchers have examined the science behind this myth <a href="https://pmc.ncbi.nlm.nih.gov/articles/PMC11161868/">again</a>, and <a href="https://pmc.ncbi.nlm.nih.gov/articles/PMC7400894/">again</a>, and <a href="https://pmc.ncbi.nlm.nih.gov/articles/PMC10304460/">again</a> – largely debunking the claim.</p> <p>A <a href="https://www.mdpi.com/2072-6643/17/2/323">new study</a> suggests that, among older adults, eating eggs supports heart health and even reduces the risk of premature death.</p> <p>Let’s unpack the details.</p> <h2>What was the study?</h2> <p>Researchers examined data from a large, ongoing study that is following older adults and tracking their health (the <a href="https://academic.oup.com/ije/article/48/4/1048/5280817">ASPREE study</a>).</p> <p>In their analysis of more than 8,000 people, they examined the foods people usually eat and then looked at how many participants died over a six-year period and from what causes, using medical records and official reports.</p> <p>Researchers collected information on their diet through a food questionnaire, which included a question about how frequently participants ate eggs in the past year:</p> <ul> <li>never/infrequently (rarely or never, 1–2 times per month)</li> <li>weekly (1–6 times per week)</li> <li>daily (daily or several times per day).</li> </ul> <p>Overall, people who consumed eggs 1–6 times per week had the lowest risk of death during the study period (29% lower for heart disease deaths and 17% lower for overall deaths) compared to those who rarely or never ate eggs.</p> <p>Eating eggs daily did not increase the risk of death either.</p> <h2>How reputable is the study?</h2> <p>The research was published in a peer-reviewed journal, meaning this work has been examined by other researchers and is considered reputable and defensible.</p> <p>In the analysis, factors such as socioeconomic, demographic, health-related and clinical factors, and overall dietary quality were “adjusted” for, as these factors can play a role in disease and the risk of early death.</p> <p>Researchers received funding from a variety of national funding grants in the United States and Australia, with no links to commercial sources.</p> <h2>What are the limitations of this study?</h2> <p>Due to the type of study, it only explored egg consumption patterns, which participants self-reported. The researchers didn’t collect data about the type of egg (for example, chicken or quail), how it was prepared, or how many eggs are consumed when eaten.</p> <p>This analysis specifically looked for an association or link between egg consumption and death. Additional analyses are needed to understand how egg consumption may affect other aspects of health and wellbeing.</p> <p>Lastly, the population sample of older adults were relatively healthy, limiting how much findings can be applied to older adults with special needs or medical conditions.</p> <h2>What is ASPREE?</h2> <p><a href="https://academic.oup.com/ije/article/48/4/1048/5280817">ASPREE</a> (ASPirin in Reducing Events in the Elderly) is an ongoing, large, randomised, placebo-controlled clinical trial involving more 19,000 participants in Australia and the US. This means some people in the trial were given an intervention and others weren’t but neither the participants nor the researchers knew who received the “placebo”, or dummy treatment.</p> <p>ASPREE started in 2010 to investigate whether low-dose aspirin (100 micrograms daily) could help prolong older adults’ health and lifespan, specifically by preventing heart disease and stroke. The <a href="https://www.nejm.org/doi/full/10.1056/NEJMoa1803955">first findings</a> were published in 2018.</p> <p>One of the fundamental conclusions of the ASPREE trial was there was no benefit from taking aspirin to prevent cardiovascular disease (heart disease or stroke).</p> <p>ASPREE is still ongoing as a longitudinal study, which means it provides information on other aspects of healthy living and long-term outcomes in older adults – in this case, the link between egg intake and the chance of death.</p> <h2>Why the focus on eggs?</h2> <p>Eggs are a good source of protein, and contain B vitamins, folate, unsaturated fatty acids, fat-soluble vitamins (A, D, E and K), choline, and minerals.</p> <p>The fuss over eggs comes down to their cholesterol content and how it relates to heart disease risk. A large egg yolk contains approximately <a href="https://doi.org/10.1016/S0828-282X(10)70456-6">275 mg of cholesterol</a> — near the recommended daily limit of cholesterol intake.</p> <p>In the past, medical professionals <a href="https://onlinecjc.ca/article/S0828-282X(10)70456-6/abstract">warned</a> that eating cholesterol-rich foods such as eggs could raise blood cholesterol and increase heart disease risk.</p> <p>But newer research shows the body doesn’t absorb dietary cholesterol <a href="https://www.mdpi.com/2072-6643/10/9/1272">well</a>, so dietary cholesterol <a href="https://pmc.ncbi.nlm.nih.gov/articles/PMC11161868/">doesn’t have a major effect</a> on blood cholesterol levels.</p> <p>Rather, foods such as saturated and trans fats <a href="https://pubmed.ncbi.nlm.nih.gov/26268692/">play a major role</a> in cholesterol levels.</p> <p>Given these changing recommendations over time, and the <a href="https://pmc.ncbi.nlm.nih.gov/articles/PMC7228817/">nuances of nutrition science</a>, it’s understandable that research on eggs continues.</p> <h2>What does this mean for me?</h2> <p>Whether you prefer boiled, scrambled, poached, baked or fried, eggs provide a satisfying source of protein and other key nutrients.</p> <p>While the science is still out, there’s no reason to limit egg intake unless specifically advised by a recognised health professional such as an accredited practising dietitian. Bakery offering free food if you beat the boss at a simple game

<p dir="ltr">After struggling with dwindling customer numbers during the pandemic, a small bakery in Melbourne has come up with a unique way to drum up more business. </p> <p dir="ltr">The Pie Place in Coburg, north of Melbourne, is offering a free pie to any customer who can defeat the owner, Justin Talbot, in a simple game of Rock, Paper, Scissors.</p> <p dir="ltr">Justin admitted to <em><a href="https://9now.nine.com.au/today/free-pies-melbourne-baker-unique-offer-for-customers-who-beat-him-at-rock-paper-scissors/483a1355-d491-4b77-a1b0-50b0c72fe503">Today</a></em> that while the idea is unconventional, he said that when free food is involved, “you can’t go wrong”. </p> <p dir="ltr">"I was at home having a few beers and I thought, how can I drum up more business?" he said.</p> <p dir="ltr">"So I thought, why not have a bit of fun with my customers? We've been here for 40 years this month. Tourists explain why they love “overrated” capital cities

<p dir="ltr">A group of travellers have explained why they love some capital cities that are often dubbed as “overrated”. </p> <p dir="ltr">On a dedicated travel thread on Reddit, one person asked the question, “Which capital city gets a lot of hate that you loved visiting?” which welcomed an influx of responses. </p> <p dir="ltr">A few capital cities were mentioned several times, one of which being the Greece capital of Athens. </p> <p dir="ltr">One Reddit user said they “avoided” Athens for a long time “because all I heard was negativity about it”.</p> <p dir="ltr">However, when they “finally went”, they say they “loved it” and “can't wait to go back”. </p> <p dir="ltr">Another person said they actually “loved” the city's “gritty feel” adding, “Incredible history at every turn, delicious affordable food, fun bars, cool music venues, neighbourhoods full of character and beautiful viewpoints.”</p> <p dir="ltr">Another capital that was mentioned was the Norwegian capital of Oslo, with one person saying the Scandinavian city was perfect for a short getaway. </p> <p dir="ltr">They wrote, “I’m not advising anyone to go for a long time but for a weekend trip, it’s lovely. The seaside is great with lots of beautiful modern architecture, the old town is picturesque, lots of trendy new places to eat and drink, some old castles to walk to and in general a really nice vibe and very walkable.”</p> <p dir="ltr">Washington D.C. was also mentioned with many people defending the city, with one person claiming “it’s generally other Americans who hate it.”</p> <p dir="ltr">One person wrote of the city, “We have great museums, food, way more nature than you’d expect for a city, and incredible music and dance scenes. It’s not just insufferable bureaucracy and politics.”</p> <p dir="ltr">The Belgian capital of Brussels was also mentioned, with the city often copping a lot of flack amongst travellers. </p> <p dir="ltr">However, many were quick to defend the city, as one person wrote,”I loved Brussels, it’s beautiful in places, has amazing museums, great beer, the EU Parliament is really interesting and the Atomium is awesome.”</p> <p dir="ltr"><em>Image credits: Shutterstock </em></p> <p> </p>

Some vegetables are pretty low in fibre. So which veggies are high-fibre heroes?

You can eat loads of salads and vegetables and still fall short of your recommended daily fibre intake.</p> <p>So, which vegetables pack the biggest fibre punch? Here’s what you need to know.</p> <h2>What is fibre and how much am I supposed to be getting?</h2> <p>Fibre, or dietary fibre, refers to the parts of plant foods that our bodies cannot digest or absorb.</p> <p>It passes mostly unchanged through our stomach and intestines, then gets removed from the body through our <a href="https://www.sciencedirect.com/science/article/abs/pii/S0268005X09002501">stool</a>.</p> <p>There are two types of fibre which have different functions and health benefits: soluble and insoluble.</p> <p>Soluble fibre dissolves in water and can help lower blood cholesterol levels. Food sources include fruit, vegetables and legumes.</p> <p>Insoluble fibre adds bulk to the stool which helps move food through the <a href="https://www.sciencedirect.com/science/article/abs/pii/S0924224418300499">bowels</a>. Food sources include nuts, seeds and wholegrains.</p> <p>Both types are beneficial.</p> <p>Australia’s healthy eating guidelines <a href="https://www.eatforhealth.gov.au/nutrient-reference-values/nutrients/dietary-fibre">recommend</a> women consume 25 grams of fibre a day and men consume 30 grams a day.</p> <p>However, <a href="https://pmc.ncbi.nlm.nih.gov/articles/PMC5986479/">research</a> shows most people do not eat enough fibre. Most adults get about <a href="https://pmc.ncbi.nlm.nih.gov/articles/PMC5986479/">21 grams</a> a day.</p> <h2>4 big reasons to increase fibre</h2> <p>Boosting fibre intake is a manageable and effective way to improve your overall health.</p> <p>Making small changes to eat more fibrous vegetables can lead to:</p> <p><strong>1. Better digestion</strong></p> <p>Fibre helps maintain regular bowel movements and can alleviate <a href="https://onlinelibrary.wiley.com/doi/abs/10.1111/apt.13167?casa_token=HTtHw4dBjtQAAAAA:HI22rAfowUBLRsg7UxeAPumvq32hnKLjxJRZZbu-26S2rxVWhmteYZ01F4_3JFJDjOTTMVRcntrecg">constipation</a>.</p> <p><strong>2. Better heart health</strong></p> <p>Increasing soluble fibre (by eating foods such as fruit and vegetables) can help lower cholesterol levels, which can <a href="https://www.bmj.com/content/347/bmj.f6879.short">reduce your risk of heart disease</a>.</p> <p><strong>3. Weight management</strong></p> <p>High-fibre foods are filling, which can help people feel fuller for longer and <a href="https://www.mdpi.com/2072-6643/9/2/149">prevent overeating</a>.</p> <p><strong>4. Reducing diabetes risk and boosting wellbeing</strong></p> <p>Fibre-rich diets are linked to a reduced risk of chronic conditions such as <a href="https://idp.springer.com/authorize/casa?redirect_uri=https://link.springer.com/article/10.1007/s00394-015-0831-3&amp;casa_token=skn6pDaWHcYAAAAA:w8PDhyb-G1gDAiflBK6-l5fgFEy_1955V7nTDIKTg6GOzmEzpRaJO3ErLzryemjf2C4Yo_ybQSaj2Yc">type 2 diabetes</a> and <a href="https://www.sciencedirect.com/science/article/abs/pii/S0959804901002544">colorectal cancer</a>.</p> <p>Recent <a href="https://www.thelancet.com/journals/lancet/article/PIIS0140-6736(18)31809-9/fulltext">research</a> published in prestigious medical journal The Lancet provided some eye-opening stats on why fibre matters.</p> <p>The researchers, who combined evidence from clinical trials, found people who ate 25–29 grams of fibre per day had a 15–30% lower risk of life-threatening conditions like heart disease, stroke, high blood pressure, and type 2 diabetes compared to those who consumed fewer than 15 grams of fibre per day.</p> <h2>So which vegetables are highest in fibre?</h2> <p>Vegetables are excellent sources of both soluble and insoluble fibre, along with essential vitamins, minerals, and antioxidants.</p> <p>The following veggies are some of the <a href="https://afcd.foodstandards.gov.au/foodsbynutrientsearch.aspx?nutrientID=AOACDFTOTW">highest</a> in fibre:</p> <ul> <li>green peas</li> <li>avocado</li> <li>artichokes</li> <li>parsnips</li> <li>brussels sprouts</li> <li>kale</li> <li>sweet potatoes</li> <li>beetroot</li> <li>carrots</li> <li>broccoli</li> <li>pumpkin</li> </ul> <h2>Which vegetables are low in fibre?</h2> <p>Comparatively lower fibre veggies include:</p> <ul> <li>asparagus</li> <li>spinach (raw)</li> <li>cauliflower</li> <li>mushrooms</li> <li>capsicum</li> <li>tomato</li> <li>lettuce</li> <li>cucumber</li> </ul> <p>These vegetables have lots of health benefits. But if meeting a fibre goal is your aim then don’t forget to complement these veggies with other higher-fibre ones, too.</p> <h2>Does it matter how I prepare or cook the vegetables?</h2> <p>Yes.</p> <p>The way we <a href="https://pmc.ncbi.nlm.nih.gov/articles/PMC3614039/#:%7E:text=Influence%20of%20different%20processing%20treatments,gravimetric%20and%20enzymic%E2%80%94chemical%20methods.">prepare vegetables</a> can impact their fibre content, as cooking can cause structural changes in the dietary fibre components.</p> <p>Some <a href="https://www.sciencedirect.com/science/article/abs/pii/S0308814602002595">research</a> has shown pressure cooking reduces fibre levels more greatly than roasting or microwave cooking.</p> <p>For optimal health, it’s important to include a mix of both cooked and raw vegetables in your diet.</p> <p>It’s worth noting that juicing removes most of the fibre from vegetables, leaving mostly sugars and water.</p> <p>For improved fibre intake, it’s better to eat whole vegetables rather than relying on juices.</p> <h2>What about other, non-vegetable sources of fibre?</h2> <p>To meet your fibre recommendations each day, you can chose from a variety of fibre-rich foods (not only vegetables) including:</p> <ul> <li>legumes and pulses (such as kidney beans and chickpeas)</li> <li>wholegrain flour and bread</li> <li>fruits</li> <li>wholegrains (such oats, brown rice, quinoa, barley)</li> <li>nuts and seeds (such as flaxseeds and chia seeds)</li> </ul> <p>A fibre-rich day that meets a recommended 30 grams would include:</p> <ul> <li>breakfast: 1⁄2 cup of rolled oats with milk and 1⁄2 cup of berries = about 6 grams of fibre</li> <li>snack: one banana = about 2 grams</li> <li>lunch: two cups of salad vegetables, 1⁄2 cup of four-bean mix, and canned tuna = about 9 grams</li> <li>snack: 30 grams of almonds = about 3 grams</li> <li>dinner: 1.5 cups of stir-fried vegetables with tofu or chicken, one cup of cooked brown rice = about 10 grams</li> <li>supper: 1⁄2 a punnet of strawberries with some yoghurt = about 3 grams.</li> </ul> <h2>Bringing it all together</h2> <p>Vegetables are a key part of a healthy, balanced diet, packed with fibre that supports digestion, blood glucose control, weight management, and reduces risk of chronic disease.</p> <p>However, the nutritional value of them can vary depending on the type and the cooking method used.</p> <p>By understanding the fibre content in different veggies and how preparation methods affect it, we can make informed dietary choices to improve our overall health.<!-- Below is The Conversation's page counter tag. Young woman dies suddenly after international holiday

<p>Christine Visnjic, 24, from western Sydney was eagerly making plans for the year ahead, and had just returned from her dream trip to Japan. </p> <p>On January 10, a month after her overseas trip, the young woman woke up with a sharp pain in her leg and found it swollen and red. </p> <p>Christine was ushered into her father's car so he could driver her to nearby Westmead Hospital to get it checked out, but started vomiting and suffered seizures during the journey. </p> <p>“Westmead Hospital is only about 2km from us, but about 500 meters down the road she told my dad to stop the car to vomit. So he stopped the car, he opened the door, she shifted herself to lean over the side, and then she experienced a seizure," her brother, Jason, told Y<em>ahoo News</em>. </p> <p>She fell unconscious not long after, and two nurses who happened to be following in another car came to her aid. </p> <p>An ambulance was called and she was rushed to hospital, but three days later, scans showed Christine was brain dead after she had suffered a bilateral stroke, disrupting blood flow to both sides of her brain. </p> <p>“There was a blood clot in her leg that broke off and travelled up to her lung, then to her heart and then to her brain,” Jason said.</p> <p>With no family history of blood clots, it is believed that the clot was a result of deep vein thrombosis (DVT), a condition that in rare cases can arise from long-haul plane travel. </p> <p>However, the exact cause is still unknown. </p> <p>“I was talking to a doctor and I asked him ‘how often do you see this?’ and he said to me ‘a case like this, we do know about it in literature…in my career of 44 years in the ICU, this is the second time’ and he started crying,” Jason said.</p> <p>"It's unbelievable, just unbelievable," he told <em>Yahoo News</em>.</p> <p>"Who would’ve thought - 24 years old and getting a blood clot that becomes so fatal."</p> <p>Christine's family had to make the heartbreaking decision of turning off her life support. </p> <p>“We embraced her and watched her pass. For about 20 minutes her heart was independent and we just slowly saw it all go away — and she doesn’t even know,” Jason said. </p> <p>He hopes that his sister's death will "at least echo a message to all the young women and men out there" to be on alert for health issues and cherish life.</p> <p>"Don’t just go chasing work. There are many lessons to take away. Luckily for her, Christine still managed to enjoy her life till her prime, both at career and social level." </p> <p>Christine's family and friends have since created a <a href="https://www.gofundme.com/f/headstone-in-honor-of-christine-visnjic" target="_blank" rel="noopener">GoFundMe</a> to raise funds for her headstone, where they have described her as a "young, beautiful, healthy girl, full of energy and love for others, whose life was tragically cut short."</p> <p><em>Image: Instagram</em></p>

Supersonic jets are making a comeback – but despite the hype, don’t expect to book yet

It’s now the first <a href="https://boomsupersonic.com/press-release/boom-supersonic-achieves-supersonic-flight">piloted non-military aircraft to break the sound barrier</a> since the Concorde was retired from service in 2003.</p> <p>It’s the first step in Boom’s ambitious goal to have <a href="https://boomsupersonic.com/united">supersonic airliners carry passengers by 2029</a>.</p> <p>But what exactly is supersonic travel? There are good reasons why it’s not more common, despite the hype.</p> <h2>What is supersonic flight?</h2> <p>The Mach number is defined as a plane’s speed divided by the speed that sound waves move through the air. To “break the sound barrier” means to fly faster than the speed of sound, with Mach numbers greater than 1.</p> <p>The Mach number is an important ratio: as a plane flies, it disturbs the air in front of it. These disturbances move at the speed of sound. Flying supersonically can drastically decrease flight times. The company claims a trip <a href="https://boomsupersonic.com/flyby/summer-travel-trends-future-travel-onboard-overture">from New York to Rome</a> on Overture could take just four hours and 40 minutes, instead of eight hours.</p> <p>Boom isn’t the only company working on this lofty goal. American firm Spike Aerospace is also developing a supersonic business jet, <a href="https://www.spikeaerospace.com/spike-s-512-supersonic-diplomat/">with the tagline</a> “delivering the world in half the time”.</p> <p>This is the value proposition of supersonic passenger travel.</p> <p>In limited ways, it did already exist in the 20th century. However, due to timing, bad luck and the laws of physics, it didn’t continue.</p> <h2>Remember the Concorde?</h2> <p>Designs for supersonic airliners began in the mid-20th century, and by the 1970s we had supersonic passenger flight.</p> <p>There was the little-known <a href="https://en.wikipedia.org/wiki/Tupolev_Tu-144">Russian Tupolev-144</a> and <a href="https://www.britannica.com/technology/Concorde">Concorde</a>, a Franco-British supersonic airliner operated by British Airways and Air France from 1976 to 2003.</p> <p>Concorde had a capacity of <a href="https://www.heritageconcorde.com/concorde-cabin--passenger-experience">up to 128 passengers</a> and cruised at Mach 2. It regularly travelled from London to New York <a href="https://airandspace.si.edu/stories/editorial/what-happened-concordes">in around three hours</a>. The flights were expensive, mainly shuttling business people and the rich and famous.</p> <h2>Why supersonic passenger flight didn’t take off</h2> <p>Concorde was designed in the 1960s when it seemed like supersonic passenger transport was going to be the next big thing.</p> <p>Instead, the Boeing 747 <a href="https://www.boeing.com/commercial/747-8">entered commercial service in 1970</a>. Cheap, large and efficient airliners like it blew Concorde out of the water.</p> <p>Designed to cruise efficiently at supersonic speeds, Concorde was extremely fuel inefficient when taking off and accelerating. Concorde’s expensive, “<a href="https://phys.org/news/2019-03-concorde-technical-feat-financial-fiasco.html">gas guzzling</a>” nature was a complaint levelled against it for most of its lifetime.</p> <p>A catastrophic <a href="https://www.flightglobal.com/safety/tu-144-crash-puzzle-persists-50-years-after-fatal-paris-display/153782.article">1973 Paris air show crash</a> of the competing Russian airliner, Tupolev Tu-144, also shifted public perception on supersonic flight safety at a time when many airlines were considering whether or not to purchase Concordes.</p> <p><a href="https://www.heritageconcorde.com/airframe-detail">Only 20 Concordes were manufactured</a> out of the <a href="https://simpleflying.com/concorde-orders/">planned 100</a>. When a plane travels supersonically, its shock waves propagate to the ground, <a href="https://www.af.mil/About-Us/Fact-Sheets/Display/Article/104540/sonic-boom/">causing loud disturbances called sonic booms</a>. In extreme cases they can shatter windows and damage buildings.</p> <p>In the early 1970s, sonic boom concerns led the United States government to <a href="https://aerospaceamerica.aiaa.org/features/supersonic-travel-dead-on-arrival/">ban supersonic passenger flight over land in the US</a>. This hurt the Concorde’s potential market, hence its only two regular routes were trans-Atlantic flights principally over the water.</p> <p>The Concorde was also a very loud plane at take off, since it needed a lot of thrust to leave the ground.</p> <figure><iframe src="https://www.youtube.com/embed/3x9hO7n5WiA?wmode=transparent&amp;start=0" width="440" height="260" frameborder="0" allowfullscreen="allowfullscreen"></iframe><figcaption><span class="caption">Video footage of the final Concorde takeoff from New York’s JFK airport.</span></figcaption></figure> <h2>The future of supersonic travel</h2> <p>A future for supersonic travel relies on solving some or all of the issues Concorde faced.</p> <p><a href="https://www.nasa.gov/mission/quesst/">NASA and Lockheed Martin’s Quesst project</a> aims to show sonic boom can be dissipated to manageable levels. They plan to fly their X-59 supersonic aircraft over US cities and gauge responses from citizens.</p> <p>Quesst aims to use the geometry of the X-59, with a long elongated nose, to dissipate sonic booms to a weak “thump”, hopefully allowing supersonic airliners to travel over land in the future.</p> <p>Spike Aerospace’s Spike S-512 Diplomat concept also aims to be a <a href="https://www.spikeaerospace.com/quiet-supersonic-flight/">“quiet” supersonic aircraft</a> with a less disruptive sonic boom.</p> <h2>Can Boom surpass Concorde?</h2> <p>Boom Supersonic don’t plan to fly supersonically over land. Their plan is to fly over land at Mach 0.94, which they claim will allow <a href="https://boomsupersonic.com/overture">20% faster overland travel</a> than standard passenger airliners, even subsonically.</p> <p>They also claim the design of their engines will ensure Overture is <a href="https://boomsupersonic.com/flyby/the-new-sound-of-supersonic-q-a-with-booms-principal-acoustic-engineer">no louder than modern subsonic airliners when it takes off</a>.</p> <p>In terms of gas guzzling, they plan to use up to 100% sustainable aviation fuel to reduce emissions and <a href="https://boomsupersonic.com/press-release/boom-supersonic-and-dimensional-energy-announce-sustainable-aviation-fuel-offtake-agreement">their carbon footprint</a>.</p> <p>Concorde was made of aluminium using design tools available in the 1960s. Modern design methods and modern aerospace materials such as titanium and carbon fibre should also allow Overture and similar craft to weigh much less than Concorde, improving efficiency.</p> <p>While Boom are currently receiving a lot of interest, <a href="https://boomsupersonic.com/overture">with orders from many airlines</a>, Concorde did have similar commitment before it become available. <a href="https://www.heritageconcorde.com/concorde-orders-and-options">Most of it didn’t eventuate</a>.</p> <p>Additionally, Concorde was the product of an analogue era when the idea of flying to London or New York for the day for an important business meeting seemed like a necessary thing. In a world of remote work and video meetings, is there still a need for a supersonic airliner in the 2020s?</p> <p>For now, supersonic airliners like Overture are likely to remain in the realm of the rich and famous, like Concorde did. But with modern technological advances, it will be interesting to see whether supersonic passenger travel once again becomes reality – or even goes mainstream. Qantas announces major change

<p>Qantas has announced that it will change the design of its uniform for the first time in over a decade, marking the end of an era for the navy red, and fuchsia colour-scheme crew have sported since 2013. </p> <p>The airline said it will begin to overhaul the old uniform over the next two years, as they look for a new Australian designer to take it to the "next era". </p> <p>They will also take into account the opinions from all all 17,500 employees who wear the uniform. </p> <p>“We have ambitious plans for the future and transforming the way we reflect the brand is critical to that,” Qantas chief executive Vanessa Hudson said in a statement.</p> <p>“Our uniform represents the Qantas spirit all over the world. With a vast and growing international and domestic network, a historic fleet renewal program underway and the final frontier of global aviation just around the corner it’s time to define a new look for our people that reflects where we are heading.</p> <p>“While the uniform style may have changed, what hasn’t changed is the pride our people have in wearing it, which is why we are putting them at the core of the design process,” she added. </p> <p>“Our people have loved wearing the current design, which was created by Martin Grant in 2013, and I want to thank him for his partnership over the course of the last decade.”</p> <p>Past designers of the uniform also include Peter Morrissey, Yves Saint Laurent, George Gross and Harry Who, and Emilio Pucci, with the new designer set to be announced in the coming months. </p> <p><em>Image: hameleonsEye / Shutterstock.com</em></p>
